Deliciously, moist shredded chicken in a Chinese sauce makes the perfect filling for a taco. Throw all the ingredients from Mu Shu Chicken Tacos into the slow cooker and come home to a healthy dinner.
Pin Slow Cooker Mu Shu Chicken Tacos here.
Slow Cooker Mu Shu Chicken Tacos has been on heavy rotation for dinner this year. It is even a favorite of my daughter’s. I have to admit, I love it too. It is simple to make and cooks in just a few hours even in the slow cooker. The chicken is moist and delicious and full of flavor. Just thinking about Mu Shu Chicken Tacos is making my mouth water. It is unusual for me to make a dish over and over again, but this is my go to when the going gets tough. Moreover, it doesn’t seem to matter what time of year it is either. Even though I tend to like heartier, hot food in the Winter and lighter, cooler food in the Summer, this seems to fit for either category.
Crispy or soft tortillas work equally as well for a shell of the taco. Sometimes I’ll make a few of each. If my hubby is making a taco, then he is liable to layer a soft tortilla inside a crunchy tortilla then add the Mu Shu Chicken. I can’t afford the extra calories of a double shell so I like to make one of each. Most of the time our little one is all about the soft tortillas. Every once in a while she will spread her wings and go for a crunchy taco. She likes to live on the wild side.
Asian ingredients can be very expensive. One tip is to buy them at an Asian market. They are so much cheaper. Most of the time the bottles are written in Chinese or Japanese so I really look for a label that I know. I would love to go to the Asian market with someone that could read the different languages to me and tell me how to use some of the more exotic ingredients. Otherwise I tend to stare at the shelves with a glazed look trying to figure out what is what.
It can be rather intimidating, but I know the prize at the end is a delicious ingredient at a lower cost. I’ll even take a picture of the bottle and label of an ingredient I love, so I can look for it again. Funnily enough, even if the label is in Chinese, I can tell from the shape and design of the label if it is the soy sauce I want. So glad the manufacturer doesn’t change that part.
Try this tasty mix of Chinese and Mexican food. I’m sure it will be a favorite in your house too. Put it into your weekly meal rotation. Speaking of weekly meals, I plan on adding a weekly menu plan to Food Done Light. Consequently I haven’t decide if it will just be a dinner plan or if it will include lunch and breakfast too. I would love to hear your thoughts on that. What would you like to see?
