Chili season has started! Even our neighborhood got in on the action with a chili cookoff. It was so much fun. We had about 12 entries into the chili cookoff, my husband being one of them. I had thought about entering this chili, but my husband was so excited about making a chili that I didn’t. We had white chicken chili, turkey chili, beef chili and my husband’s pork chili. Some were spicy, some were smoky and some were both. I loved to listen to everyone’s opinions on the chili and why they preferred a particular one. Everyone got to vote and in the end my husband’s chili won, but you won’t be getting that recipe. What?! To start with, it wasn’t overly healthy. Then there is the fact that he smoked a pork butt, hydrated chilis, smoked tomatillos and about 20 other steps. In other words, it was a huge amount of work, and, of course, he measured and wrote down none of it. It was so good that I will have to get him to try to make it again and write it down this time.
So you are stuck with my Slow Cooker Jalapeno Popper Chicken Chili. Don’t worry, this one would have won if I had entered it. Don’t tell me husband! Ok, maybe he still would have won, but this is one winning healthy chili. It is fairly easy to make, especially since you can cook it in the slow cooker. You can amp up the heat or moderate it to your taste by adding more or less jalapeno. Top it with a little Greek yogurt, cheese and chopped cilantro. This Slow Cooker Jalapeno Popper Chicken Chili will keep you warm on a cold, winter night. We are going to finally cool down, aren’t we?

Slow Cooker Jalapeno Popper Chicken Chili
- 1 tsp . oil
- 8 oz . mild or spicy chicken sausage
- 1 lb . ground chicken
- 2 cups chopped onions
- 2 cups chopped bell peppers
- 8 oz . chopped mushrooms
- 8 garlic cloves , minced
- 1 jalapeno , seeds removed and chopped
- 1 tbsp . ground cumin
- 1 tsp . ground oregano
- ½ tsp . ground black pepper
- 1 tsp . kosher salt
- 1 cup low-sodium chicken broth
- 2 (15 oz.) cans northern beans, rinsed and drained, divided
- 4 oz . Greek yogurt cream cheese
- ¼ cup chopped fresh cilantro
- 1 jalapeno , sliced
Heat oil in a large non-stick skillet over medium heat.
Brown sausage and chicken. Add to slow cooker.
Add onions, pepper, mushrooms, jalapeno and garlic to skillet. Stir fry for 5 minutes.
Add spices and cook for 1 minute.
In a blender, puree chicken broth with ½ cup beans. Place remaining beans into slow cooker.
Add chicken broth mixture to skillet, scraping off any browned bites.
Pour into slow cooker.
Cook on low for 4 hours.
Add cream cheese and cook for another 30 minutes.
Serve with sliced jalapeno and cilantro.
