Today is my Birthday! Birthdays have to include some type of cake so I’m sharing a family favorite, Skinny White Cupcakes with Dark Chocolate Cream Cheese Frosting. Grab one for yourself. One bite and you will be hooked. I’ve been using this recipe for years and it is always a favorite. The white cupcake is so incredibly flavorful and is an old-fashioned recipe. Sometimes, older is better. Well let’s hope so, as I am another year older. Luckily age doesn’t bother me much.
I have to admit a little dirty secret. Surprisngly, I almost always have some of these cupcakes in the freezer. They aren’t frosted but when I bake them, I bake an extra batch or two. Let a frozen one defrost on its own, and you won’t have any clue it wasn’t freshly made that day. They are pretty darn good without the frosting too. That isn’t to say you won’t want to lick the frosting right off the spoon but it is usually the frosting that packs the most calories onto a cake or cupcake. It is sad but true, even in this case. I did cut some of the sugar from both the cupcake and frosting which helps tremendously with the calories on these. Sugar is high on my radar and I’m slowly widdling down our intake.
Another dark, little secret, I start to think about what birthday cake I want months before my birthday. Last year I had a cake based on Roasted Banana filled Banana Cupcakes with Chocolate Ganache. There were a lot of moving parts to that one, so I simplified things this year with a simple cupcake and frosting. I have easily made these cupcakes into a cake. Just double or triple the recipe depending on the size cake you are making. You can fill it with delicious pastry cream, a personal favorite. Fruit always goes well with cake. Then you can top it with this delectable dark chocolate, cream cheese frosting. All food groups are present, cake, chocolate, fruit and cream. What more could you want for a birthday?

Skinny White Velvet Cupcakes with Dark Chocolate Cream Cheese Frosting
- 2 large egg white taken out for 30 mins
- ½ cup unsweetened coconut milk divided (taken out for 30 mins) (you can use regular skim milk)
- 1 ½ tsp. vanilla extract
- 1 cup 112 grams cake flour
- ½ cup 60 grams whole wheat pastry flour*
- 2/3 cup sugar
- 2 tsp. baking powder
- ¼ tsp. kosher salt
- 4 tbsp. unsalted butter softened
- 2 tbsp. 2% fat Greek Yogurt taken out of refrigerator for 30 minutes
- ¼ cup low fat cream cheese softened
- ¼ cup butter softened
- 1 tsp. vanilla extract
- 3 tbsp. dark cocoa powder
- Pinch of salt
- 1 cup powdered sugar
- 1 to 2 tbsp. unsweetened vanilla coconut milk
Preheat oven to 350
Fill a 12 hole cupcake pans with cupcake wrappers.
In a small bowl, mix together egg whites, vanilla and 2 tbsp. milk.
In a medium bowl, whisk together cake flour, pastry flour, sugar, baking powder and salt.
In the bowl of a stand mixer, beat in on low speed the butter, yogurt and remaining 6 tbsp. milk until just moistened.
Increase to medium speed and beat for 1 ½ minutes. Scrap down the sides of the bowl
Then reduce speed to low and add 1/3 of egg mixture. Beat for 20 seconds, add another 1/3 and beat for 20 seconds and repeat with final 1/3, scraping down sides of bowl again.
Using a small ice cream scoop, scoop batter evenly into cupcake wrappers.
Bake for 15- 20 minutes swapping trays around half way through cooking. Cook until toothpick inserted into the middle of a cupcake comes out clean.
Place pan on wire rack and cool for 10 minutes.
Take cupcakes out of pan and place directly onto wire rack. Allow to cool completely before frosting.
To make frosting:
In the bowl of a stand mixer, beat the cream cheese and butter together until light and fluffy.
Mix in vanilla, cocoa powder and salt.
Beat in the powdered sugar.
Add milk if needed.
*If you don't have whole wheat pastry flour, you can use all cake flour instead
