I try to menu plan each week but always seem to run into a mental block when it comes to Friday night. As a matter of fact, I do not like planning a friday night dinner, probably because I don’t really want to cook on a Friday night. Furthermore, I want dinner to magically appear on the table while I sit with my feet up sipping a cocktail. For some reason the Dinner Fairy never visits my house to deliver a healthy and delicious dinner for my family. The tooth fairy, Easter Bunny and Santa all come. What is wrong with the Dinner Fairy coming? It seems perfectly reasonably to wish for one.
Since the Dinner Fairy refuses to come to my house, you can usually find me at Publix on Friday trying to decide what to cook for dinner. It needs to be easy and healthy. This past trip I spied some Aidells® Chicken & Apple Sausage. Considering sausage is my absolute favorite protein, it is no big surprise I ended up in that aisle. I like to choose Aidells®, as it is hand crafted with no nitrites or added hormones. Plus they are already cooked which speeds up dinner. Aidells® is going on sale at Publix from March 17 to March 25. With this in mind, I am going to stock up during the sale. Frequently I use sausage in my dinner recipes. I especially love that it adds so much flavor.
The bonus for Skillet Pasta Primavera with Aidells® Chicken & Apple Sausage is that there is only one pot to wash. That means I can finish the dishes in no time and be sitting with my feet up sipping that cocktail. In addition, this recipe is easy. Slice up the sausage. While the sausage is browning, slice up your leeks and chop the garlic. That is all the slicing and dicing you have to do. Then it is a matter of dumping everything into the skillet. Voilá, dinner is served, almost as easy if the Dinner Fairy had visited.

Skillet Pasta Primavera with Sausage
- 1 tsp grapeseed oil
- 4 Aidells® Chicken & Apple Sausages sliced
- 1/2 cup finely sliced leeks
- 3 garlic cloves minced
- 1 tbsp tomato paste
- 1/2 cup white wine
- 8 oz whole wheat pasta
- 2 1/2 cups low-sodium chicken broth
- 3 to 4 cups water
- 3/4 tsp kosher salt
- 1/4 tsp red pepper flakes
- 4 oz sweet pea lettuce mix
- 1/2 cup peas
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped cilantro or parsley
- 3 tbsp chopped green onion
Heat oil in a 12-inch non-stick skillet over medium heat-high heat.
Add sausage and brown on both sides. Place on a plate.
Add leeks and garlic to the pan cooking until leeks are tender.
Add tomato paste and cooking stirring for 1 minute.
Stir in white wine and simmer for 1 minute.
Stir in pasta, stirring frequently for 4 minutes.
Stir in chicken broth, 3 cups water salt, sausage and red pepper flakes.
Increase temperature to high and cook, stirring frequently, until pasta is tender, about 20 minutes. Add more water if needed.
Stir in pea shot mix and peas.
Turn off the heat and stir in Parmesan.
Sprinkle with cilantro and green onion.
