Third they celebrate seasonal vegetables and fruit. In this case, gorgeous green asparagus is the star for this asparagus salad. By taking the time to “shave” the asparagus, the final salad has an array of green colors from dark green to light green. Furthermore, shaving the asparagus gives the salad an airy texture. In fact you could think of these as asparagus noodles. Making noodles out of zucchini and other vegetables has become quite trendy.

Healthy Asparagus Salad - Low Calorie

For this healthy asparagus salad, I whisked up an asian vinaigrette with the addition of the crunch of sesame seeds. A balance of sweet, savory, salty and umani is the key. Each flavor is represented in the dressing adding layers of Asian flavor to this asparagus salad. For a quick weeknight meal, serve this shaved asparagus salad with grilled chicken or fish. Shaved Asparagus Salad with Sesame Vinaigrette

Ingredients

  • 1 lb asparagus
  • ¼ cup finely chopped green onion
  • 2 tbsp . chopped basil
  • 1 tbsp . low sodium soy sauce
  • 1 tbsp lime juice
  • ½ tbsp . vegetable oil
  • ½ tbsp . water
  • 1 tsp . fresh grated ginger
  • ½ tbsp . rice vinegar
  • 1 tsp honey
  • ½ tsp sesame oil
  • ½ tsp sesame seeds
  • ½ tsp kosher salt
  • ¼ tsp fresh ground black pepper

Instructions

  1. Using a vegetable peeler, shave asparagus into thin strips. The tips will fall off. Add tips and shaved asparagus to a large bowl.
  2. Add green onions.
  3. In a small bowl, whisk together remaining ingredients.
  4. Pour over asparagus and gently toss to combine.
