This year, I have set myself a mission to grill vegetables we haven’t grilled before. That is one tall order. We grill a lot of veggies. About 10 years ago, we started grilling romaine lettuce, and it was a game changer. You don’t need salad dressing, and it is ready in 5 minutes. We got stuck on grilling romaine and never ventured further. This year I wanted to expand the leafy green veggies we threw on the grill. My parents bought some radicchio for us to try grilled.
Oh man was that good, but I had no time to get pictures before the vultures descended. You will have to wait for that recipe, because it is insanely good. Baby bok choy is a favorite of my husband’s. Truth be told, we have grilled it before, but totally burnt it. Whoops! This time we got it right and with a quick sprinkle of ground ginger and sesame seeds, this dish turned out to be outstanding.
The main reason I love to grill vegetables is because it is so easy and quick. It feels like cheating to call it cooking. Plus you have the bonus of extra super-duper flavor. The grill gives the leafy vegetables a slight smokiness not to mention a little more sweetness from the caramelization occurring. I really do not have to do anything but let the grill do its magic and get out-of-the-way. Easy peasy for summer. We only have a couple of weeks left before munchkin is back in school. This summer has been pretty turbulent for us with the death of my father in law, so we are trying to make the most of the time we have left to have a little fun. Quick and easy dinners are helping us have time for more summer fun.

Sesame Ginger Grilled Bok Choy
- 2 baby bok choy , cut in half lengthwise
- 2 tsp . sesame oil
- 1/2 tsp . kosher salt
- 1/8 tsp . fresh ground black pepper
- 1/8 tsp . ground ginger
- 1 tsp . toasted sesame seeds
Preheat grill to high heat.
Toss bok choy with oil, salt and pepper.
Grill bok choy about 2 minutes per side.
Place on a plate and sprinkle with ginger and sesame seeds.
