What is the first summer vegetable that comes to your mind? Is Zucchini the first that pops in your mind? I would bet that it is. First zucchini are extremely plentiful in the summer. Second they are cheap. Third zucchini are versatile. You can use them as a side dish or in bread or even a cake. In essence, zucchini is the perfect summer food, and I am embracing it with this sauteed zucchini and summer squash.
In this case, I paired zucchini with summer squash, aka yellow squash, for an easy and healthy side dish. With the addition of some scrumptious bacon, this side dish is a real winner. Truly, bacon makes everything better. In addition, I splurged on a little extra fat by using a teaspoon of the bacon grease to cook the onions in. Wow wee, the flavor is well with that little extra something-something.
Consequently, you can have a healthy and easy side dish of sauteed zucchini ready in 15 minutes. Your dinner is going to be such a hit. If by some strange reason you don’t devour all the zucchini, add a little cooked pasta to it the next day. Magically you have a delectable pasta salad for dinner.

Sautéed Zucchini and Yellow Squash
- 4 slices center cut bacon cut into lardons
- 1 cup chopped onion
- 3 garlic cloves minced
- 2 large zucchini cut into quarter moons
- 2 large yellow squash cut into quarter moons
- 1 tsp. dried oregano
- ¾ tsp. kosher salt
- ¼ tsp. fresh ground black pepper
Add bacon to a large skillet placed over medium heat on a stove.
Cook until bacon is crisp.
Remove with a slotted spoon onto a paper towel lined plate.
Drain all but 1 teaspoon of bacon grease.
Place skillet back over medium heat.
Add onions sautéing until translucent, about 5 minutes.
Add garlic, cooking for 1 minute.
Stir in zucchini and yellow squash.
Cover and cook for 10 minutes, stirring occasionally.
Stir in oregano, salt and pepper.
Cook for another 5 minutes uncovered or until squash is tender.
Makes 5 one cup servings
