Healthy Recipe Round Up #4
I have some great recipes lined up for you this week from my fellow food bloggers. I had such a hard time narrowing down my very long list of healthy food finds. I love that these fritters are made with zucchini and cooked in a skillet rather than deep-fried. The guacamole just puts it over the top for me. What a great appetizer.
I just love the Buttermilk Pesto dressing for this salad. The corn is actually dry roasted to give it extra flavor and crunch. Gorgeous & healthy!
I recently bought farro but havent’ tried it yet. This salad will be the perfect introduction for us. Once I saw the arugula and feta cheese; I was sold. There is such complexity to this salad. A true party of flavors.
You probably know I have a thing for lentils. So, of course, as soon as I saw muffins with lentils in them I was intrigued. The addition of bananas, peanut butter and cinnamon just sealed the deal for me. Great Muffins.

So happy to find an innovative way to put beans in a dish. I love that Carrie mixed them with lasagna noodles, cottage cheese and mozzarella. This dish screams healthy comfort food.
Chocolate and cherries are one of my favorite flavor combinations. Fresh cherries are in the filing as well as one of my favorite ingredients, Greek Yogurt. What is not to like about this pie?
Baked Chickpeas are a popular snack in India and remind my husband of home. I find Indian spices are so seductive. This snack would last for about 1 minute in my house.
It was the dark soy that I gravitated to in this recipe. We have a bottle in our pantry that we like to use. It has a slightly more pungent flavor than regular soy sauce. Braising the chicken in Chinese flavors makes it irresistible.
I love patties; pretty much any type of patty. I have been trying to widen our use of grains and the bulgar in this recipe seems like a great way to do that. Lunch would feel so special with these patties.
The vibrant colors of this salad drew me in. It is loaded with a rainbow of vegetables and dressed lightly with a cumin, red wine vinaigrette. It would be the perfect side dish with chicken or a nice light lunch.
