I never miss an opportunity to have mashed potatoes. Ever since I was a kid, I just adored them. If I was sick, mashed potatoes were what I wanted. If I was healthy as a horse, mashed potatoes were top on my list, too. For a long time I only wanted mashed potatoes made with “white” potatoes. I always found mashed sweet potatoes too watery until I roasted them. If I’m roasting sweet potatoes, why not roast some onions and garlic to go into the mashed? Roasted Sweet Potato, Onion and Garlic Mash is my new favorite way to eat mashed potatoes.
I could eat a big bowl of this any day of the week. Roasting the vegetables, gives them extra sweetness and flavor. Forget having water-logged mashed potatoes. Forget having to wait for water to boil, then draining. I’d rather pop a baking sheet into the oven and smell the scrumptious aroma of roasted garlic. Oh you know how good that is! Did I forget to mention, I didn’t peel the potatoes first. Oh yes, time saver. After the potatoes are roasted, they pop right out of the skin. You can’t tell me that isn’t a huge plus.
Roasted Sweet Potato, Onion and Garlic Mash is special enough for Christmas and easy enough for a weeknight meal. Once you make it once, you will crave it. Oh yes, it is that good. You could say Roasted Sweet Potato, Onion and Garlic Mash is a “thing dreams are made of”, at least mine.

Roasted Sweet Potato, Onion and Garlic Mash
- 1 1/2 lbs . sweet potatoes
- 1/2 large onion 1/2 inch slices
- 4 garlic cloves skins still on
- 1 tsp . oil
- 1 tbsp . light butter
- 1/4 cup non-fat milk
- 1/2 tsp . kosher salt
- 1/8 tsp . fresh ground black pepper
Preheat oven to 450°.
Place sweet potatoes, onions and garlic on a baking sheet. Drizzle onions with oil.
Bake for 35-45 minutes, or until sweet potatoes are fork tender an onions are slightly caramelized.
Peel off the skin from the sweet potatoes and garlic. Put them and the onion in a bowl and mash.
Stir in butter, milk, salt and pepper.
