Roasted Shrimp Cocktail with Lemon is an unbelievably simple recipe with amazing flavor. Don’t you love that kind of recipe, when you get a lot of bang with little effort. I can normally take or leave shrimp cocktail. Even when it is perfectly cooked, I find it rather boring. Something magical happens when you roast the shrimp with lemon. They are juicy and so flavorful there is no need for a sauce. I love to have recipes like this in my pocket for company or just a quick meal.
These were inspired by some roasted shrimp by husband’s Godmother made us when we visited her in the North Carolina mountains in February. She knows we love to graze over dinner and had made a beautiful spread of Mediterranean appetizers. The shrimp was certainly a star. It has become a bitter-sweet memory as she has sold the mountain home and is moving.
We had been going to visit her twice a year. Cell phone reception was very spotty so we totally unplugged from everything and enjoyed the wonderful mountain air and great company. I knew our daughter loved to go, but I didn’t realize how much until she came home with a book she had written in school. We were looking at it, and I saw that she wrote about visiting Aunty’s mountain home. She wrote how much she was going to miss it. The next thing I know she made it into a song and is singing about. It was the sweetest thing.
So glad I managed to get a video of it, before she decided to be shy. While I am so glad for Aunty that she sold the house, and she can move near her family, I am sad that she will be further away from us. We won’t have that amazing retreat to recharge. I will cherish the memories of Ly sledding in the snow, traipsing through the woods looking for deer, and sitting on their porch with the amazing view.
Every time I make this recipe I can think about all those wonderful times and look forward to making new ones in Virginia.

Roasted Shrimp Cocktail with Lemon
- 2 lbs. jumbo shrimp* de-veined and shells removed
- 1 lemon thinly sliced
- 1 tbsp. olive oil
- 3/4 tsp. kosher salt
- 1/8 tsp. fresh ground black pepper
Preheat oven to 400•.
On a large baking sheet, toss ingredients together.
Bake for 8 minutes, or until shrimp are pink.
Place shrimp and lemon on a plate and chill.
Squeeze a few of the lemon rings over the shrimp and serve
*Jumbo shrimp are also unkown as U16-20 meaning there are between 16 to 20 in a pound.
