Roasted Guajillo Pepper Salsa

Salsa is a must have in your refrigerator, if you are trying to lose weight.  It is so incredibly versatile and adds a lot of flavor for little calories. A round of applause for salsa.  I love to have it on hand to add flavor and a little spice to my food.  It also is incredibly easy to make.  Why not make some today?

You don’t have to wait for tomato season to make salsa.  I  use roma tomatoes also known as plum tomatoes or Italian tomato.  Out of season they are the most reliable.  The trick is to roast them. Roasting the tomatoes intensifies their flavor and gives a little sweetness.  I actually roast all the vegetables that go in the salsa.  Why not?  The oven is already on.

I love a smoky, spicy, sweet salsa.  That is why I use dried guajillo peppers.  I can find them at my local grocery store.  You can use a different dried chili pepper.  Just be aware that some are hotter than others and the smoky flavor will be different.  Orange juice is what really sets this salsa apart though.  It not only adds some acid but some sweetness too.  Orange juice helps all the other flavors combine into salsa goodness.

Salsa is not just for chips either.  You can eat it with every meal of the day.  I love to put it on scrambled eggs for breakfast.  I mix it with yogurt and spread it on a sandwich to perk up my lunch. Top a crostini with brie and salsa for an appetizer.   Put it on grilled chicken or fish for dinner.  Dessert?  Hmm haven’t quite come up with anything yet.  What do you like to do with salsa?

Roasted Guajillo Pepper Salsa

  • 6 roma tomatoes, halved
  • 1 sweet onion, peeled and halved
  • 3 dried guajillo peppers
  • 2 garlic cloves in their peel
  • 6 tbsp. orange juice
  • Juice of 1 lime
  • 1 1/2 tsp. kosher salt
  • 1/4 cup minced fresh cilantro


  1. Preheat oven to 425°.
  2. Place tomatoes, onion, guajillo peppers and garlic on a baking sheet. Sprinkle tomatoes with a pinch of salt.
  3. Bake for 5 minutes. Take out the guajillo peppers and bake the vegetables for another 15 minutes.
  4. Transfer tomatoes and onions into a food processor. Push garlic out of the peel into the food processor. Cut off the stems of the peppers and discard the seeds (if you want your salsa really spicy, put the seeds in the food processor). Break up peppers into the food processor and puree.
  5. Pour salsa into a bowl and stir in orange juice, lime juice, kosher salt and cilantro.
  6. Refrigerate for at least 1 hour to let the flavors combine.

  5. Great idea on adding the guajillo peppers -- I use a combination of guajillo and ancho peppers in our chili all the time but hadn't thought of adding them our salsa. Yum!
