Deliciously sweet roasted carrots tossed in a fresh orange vinaigrette with creamy, chopped avocado is a healthy side dish perfect for a holiday and easy enough for a weeknight.

We have my Mom to thank for this recipe. She sent me a recipe for a carrot salad that sounded phenomenal, but then I looked at all the steps to make it. I mean all the steps. You had to blanch the carrots before roasting and even the vinaigrette was not simple. It seemed like making a recipe hard for the sake of making it look impressive. A recipe doesn’t have to be hard or have a lot of steps to be impressive. All you need are good ingredients. So I made up my own recipe. Mine is very simple. The prep work is minimal and the oven does all the hard work roasting and caramelizing the carrots. You can whip up a quick vinaigrette with some fresh orange and lemon juice and chop up some avocado. Presto, you have one scrumptious salad that is perfect for a special occasion but easy enough for a weeknight. Thank you Mom. This side dish is a winner.

Ingredients

  • 1 lb. small carrots, peeled and cut into 3 inch long pieces*
  • 1/2 orange
  • 1/2 lemon
  • 2 tbsp. olive oil
  • 1 tbsp. sherry vinegar
  • 2 medium garlic cloves, minced
  • 1/2 tsp. ground cumin
  • 3/4 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper
  • 1/2 avocado, diced
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 450*.
  2. Place carrots, orange and lemon half on a baking sheet.
  3. In a small bowl, whisk together oil, vinegar, garlic, and cumin. Pour over the vegetables and toss well.
  4. Sprinkle with salt and pepper.
  5. Spread out the carrots and place the fruit halves cut side down.
  6. Bake for 40 minutes, until carrots are fork tender, stirring halfway through.
  7. Place carrots on a serving dish.
  8. Sprinkle with avocado and cilantro.
  9. Squeeze juice from orange and lemon. Toss to combine.
