Deliciously, roasted and caramelized broccoli topped with crunchy, toasted Parmesan cheese will have your children happy to eat their vegetables.
This is a lazy recipe. I was too lazy to make Broccoli with Cheese Sauce, and I am so glad I was. Roasted Broccoli with Toasted Parmesan Cheese is so much better plus it is lower calories. When it comes to vegetables, roasting is almost always my preferred method of cooking. Roasting brings out the natural sweetness of the vegetable and crisps them. No soggy vegetables here! The toasted Parmesan was a total fluke. I had made this dish earlier in the day so I could take photographs of it for the blog. I put the cauiflower back on the baking sheet and re-heated it for dinner. Oh my gosh! What a great fluke. The Parmesan cheese got toasty and crispy. What a flavor bomb they added to the broccoli.
I am so glad my laziness worked out. Every January I struggle. There seems to be so much to do, like taking down the Christmas decorations. I just finally got them all put away. Yes, we have way to many. I did it a little at a time and kept thinking “The Santafication process has started.” Do you know what Christmas movie that is from? Santa Clause 2. Plus I put more pressure on myself to lose weight, exercise more and just generally get more done. The more pressure I put on myself, the less I get done. It is a vicious cycle, which I am trying very hard to break.
I usually take down all the decorations in one day. They fill about 30 plastic tubs, which all have to be put in our garage. The next day my back hurts and I am worthless. This year, I decided to do it a little at a time. I am also trying to take baby steps to my goals of becoming more healthy. Every January I jump right into a heavy workout and surprise, surprise, I injure myself. What is that saying “The definition of insanity is repeating the same thing over and over again and expecting a different outcome?” Is that it? I am trying hard not to do that this year. Aren’t we suppose to get smarter as we get older? I am going to strive to do so.
Luckily my laziness paid off in a big way with this recipe. It is so simple to make. It is delicious and even had my daughter eating broccoli. She is still in that vegetable hating stage, or so she thinks. We had asparagus the other night and I didn’t give her any. I had given her a different vegetable. She wanted to know where her asparagus was. I told her there was some in the kitchen. She went back six times, each time taking an asparagus spear to munch on. That is another “lazy” mistake recipe, you will get next month. Maybe the key is not to give her any vegetables and let her think she is missing out on something totally delicious. Hmm, I’ll have to think about that one.
