Pumpkin Spice Latte – No Sugar Added

Yes, I am on the bandwagon of Pumpkin Spice Latte lovers. What is it about this delicious coffee drink that makes so many of us nuts for it? Is it that a sip instantly transports you to that feeling of pumpkin pie and Thanksgiving? However, I find the Pumpkin Spice Latte at a popular coffee place to sweet now a days. Ever since I started reducing my sugar intake and totally eliminated sugar or sweetener from my coffee, a surprising side effect was that some of the food I loved the most is too sweet.

Thus I’ve had to find way to make them myself so I control the sugar. That is where this Pumpkin Spice Latte comes in. First I totally eliminated the pumpkin spice syrup. It is all sugar, you know. Instead I steep the milk with whole spices like cinnamon sticks. cloves, and ginger. Next I added a little freshly grated nutmeg and a pinch of allspice. This way I still get all the flavors of the pumpkin pie spices without any added sugar.

Next, when it comes to espresso I am a two shot kind of gal. Load me up. If you prefer a lighter coffee flavor, use one shot. Also feel free to add a little sweetener, if you so desire. In case you do not have whole spices, feel free to use ground cinnamon, cloves and ginger. Just be sure to strain the milk really well. You may want to add a coffee filter to your sieve to catch all the ground spices.

In addition, you may notice that I don’t add whipped cream. In fact I loathe whipped cream on my lattes. Have you noticed the whipped cream gets in the way when you are trying to sip your latte? So annoying to me. Not to mention all those calories. Forget about it. Just go with delicious steeped milk. In case you are wondering, you can use whatever milk floats your boat – almond, coconut, soy, nonfat, 2% or whole. Go for what you like and enjoy a delicious Pumpkin Spice Latte.

  • 1 cup 2% milk, or any other type
  • 1 cinnamon sticks
  • 1 piece fresh ginger
  • 1 clove
  • Pinch allspice
  • Pinch of nutmeg
  • 1 to 2 shots espresso
  • Optional: Sweetener


  1. Pour milk into a small saucepan.
  2. Add cinnamon through allspice
  3. Bring to a simmer.
  4. Turn off the heat and let steep for 5 minutes.
  5. Place a strainer over a 2-cup heat proof measuring cup.
  6. Pour milk through the strainer to remove spices.
  7. Fill mug with a shot or two of espresso.
  8. Using a foamer, foam the milk.
  9. Pour milk into mug. Spoon froth on top.
  10. Add sweetener, if wanted.
  11. Sprinkle with nutmeg, if wanted.
