Happy Easter

I’m celebrating today with these gorgeous and oh so delicious, Pineapple Upside Down Donuts with Strawberries.  Plus, of course, a big cup of coffee.  Easter morning starts early with our daughter excited to see if the Easter Bunny came.  Did he fill her Easter basket?  Did he hide the eggs?  Does he know where he hid the eggs?  That is always interesting, if Ly cannot find them all.  Then it is off to see if the Easter bunny ate his carrot. By this time, I need a second cup of coffee, and would happily enjoy another donut.  Luckily these beauties are baked not fried and made with whole wheat and SPLENDA®.  So they are low in sugar to boot.

After the Easter egg hunt, we are off to brunch.  This is a new tradition for us.  We actually go out to eat instead of going to my parents for dinner.  It is so relaxing to go out.  There are no dishes to do!  Yippee, that is like having a day off of work.  I do a lot of dishes in this house.  After a divine brunch, we head to my parent’s house.  The Easter bunny visits them to hide eggs and gifts for my daughter too.

Yes, she is a tad spoiled by her grandparents.  They always make clues for her to find the surprises.  It is so funny, she is terrible at looking for things. I blame this on her father who can be looking for something in the refrigerator and not see that it is right in front of his face.  Ly is pretty much the same way.

Pineapple Upside Down Donuts with Strawberries

Ingredients

  • 1 cup whole wheat pastry flour 120 g
  • 1/2 tsp kosher salt
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp SPLENDA® No Calorie Sweetener Granulated
  • 1/2 cup 2% fat Greek yogurt
  • 1 egg
  • 2 tbsp pineapple juice from can of pineapple
  • 1/2 tsp vanilla extract
  • 24 chunks of pineapple canned, about 1/2 cup
  • 4 strawberries cut into 24 pieces
  • 2 tbsp SPLENDA® Brown Sugar Blend

Instructions

  1. Preheat oven to 375•.
  2. In a medium bowl, whisk together flour, baking powder, baking soda and salt.
  3. In another medium bowl, whisk together SPLENDA®, yogurt and egg.
  4. Stir in pineapple juice and vanilla extract.
  5. Slowly mix dry ingredients into wet ingredients. Mix until just incorporated.
  6. Place 1/2 tbsp. SPLENDA® brown sugar in the bottom of each donut slot.
  7. Top with pineapple and strawberries.
  8. Spoon or pipe batter on top of pineapple.
  9. Bake for 10-12 minutes, turning pan halfway through.
  10. Cool for 5 minutes.
  11. Place donuts directly on wire rack and cool completely.
