I love having smoothies in the morning, because they are so easy. Sometimes drinking something for breakfast just doesn’t do it for me. I need to chew on some food. The simple solution is a smoothie bowl. I still get all the nutrition from a smoothie, but I also satisfy myself with some crunchy toppings and whole fruit. I have to admit, eating a smoothie with a spoon reminds me of eating melted ice cream. How is that for imagery? You feel like you are eating some delicious pina colada ice cream for breakfast, but in fact, you are having a healthy breakfast. What a great way to trick my mind.

Besides from feeling like I am having a luxurious and satisfying breakfast, my other nutritional need in the morning is protein. My body does better with a high protein breakfast. So I have added ingredients to help increase the protein in this smoothie. One of my favorite ways to enjoy a little extra protein is with Nature Valley™ Protein Granola. My Pina Colada Smoothie Bowl needed some crunch, and Nature Valley™ Protein Granola was a delicious way to add it. I just sprinkled a little on top and enjoyed a little crunch with every bite. We went on a road trip last week to visit my grandparents and took a bag in the car as a snack. We should have brought two bags, one for the front seat and one for the back. My little one ended up holding the bag ransom. She was happily munching away while watching a movie. Who needs popcorn when you can munch on granola instead? Next time, I’ll be smart and pack it into two bags; so those of us in front can have some too. I think she found it quite convenient to have her headphones on and not be able to hear my request to send the bag up. Little rat! I shouldn’t complain, she never once asked “Are we there yet?” during our seven hour drive.

Pina Colada Protein Smoothie Bowl with Granola

Ingredients

  • 3/4 cup chopped fresh pineapple divided
  • 1 5.3 oz. coconut flavored Greek yogurt or coconut milk yogurt
  • 1/4 cup 1% fat cottage cheese
  • 1 tsp. honey
  • 1/4 cup chopped papaya
  • 1/4 cup chopped mango
  • 2 tbsp. unsweetened shredded coconut
  • 2 tbsp. Nature Valley TM Protein Granola Honey with Dark Chocolate

Instructions

  1. In a blender puree, 3/4 cup pineapple and next 4 ingredients.
  2. Pour into a bowl.
  3. Top with remaining pineapple and the rest of the ingredients.
