In August, I love to make simple and quick dinner recipes. School is back in, and I need dinner quickly, really quickly. This halibut is ready in 10 minutes, that is including prep time. How is that for easy? Plus it has five ingredients, including salt, pepper and oil. That is a serious success in my book. To go along with my quick and easy theme, I am keeping this short! Just make it. You will love it, and so will your family.
If that was a little too quick for you, I’ll write a little more. I do like to finish this dish in the oven. That is a Chef’s trick, I learned from a Chef at our favorite restaurant. They sear food on the stove, and then finish it in the oven for more even cooking. While it is baking, I can finish making the salad or side dish. Ok, you only have three minutes once the halibut is in the stove, but that is enough time to make a simple oil and vinegar dressing. That is my go-to these days. We are working our way through flavored vinegar and oil. Another quick tip to get dinner on the table in an instant.

Pesto Crusted Halibut
- 1/2 tbsp. oil
- 1 1/2 lbs. halibut cut into 4 fillets
- 1/2 tsp. kosher salt
- 1/8 tsp. black pepper
- 1/4 cup basil pesto
Preheat oven to 425°.
Cut halibut into 4 even pieces.
Pat dry with a paper towel and sprinkle both sides with salt and pepper.
Heat a cast-iron skillet over medium high heat.
Add oil and gently place fish into the skillet.
Cook on one side for 4 minutes.
Gently turn the fish over and spread 1 tbsp. pesto over each piece.
Place skillet into the oven and bake for 3 minutes.
