Do you ever have friends over for breakfast instead of dinner? Having friends over for breakfast is such a fun way to start the day. OK, it isn’t so fun if you have to get up early to cook and clean. That is why Peach Upside Down French Toast Casserole is so perfect. You put it together the night before. Not to mention that it is incredibly easy and quick to put together. When I recently had some friends over for breakfast, I whipped this recipe up.
I was looking for something healthy but special at the same time. By using SPLENDA® Sweeeners, we can have a little sweetness without the calories. It also had to be easy. I am not a morning person, and my brain does not begin to turn on until after my first cup of coffee. Getting up early wasn’t an option. I am totally realistic, it is not going to happen. I will hit snooze button too many times, or worse yet; accidentally turn the alarm off and go back to sleep. Plus I had to get my little one off to school.
I have got to be fully prepared the night before for morning. I am not exaggerating. This morning I forgot to give my daughter her gift to give to the teacher for Teacher Appreciate Week. I am the Room Mom and sent the details out to all the parents last week. Could I remember this morning? No. Then I decide to go to the grocery store early. As I am getting ready to check out. I realized I don’t have my purse. Holy cow! After nearly having a heart attack, I realized I had left imy purse in the front seat of the car in plain view. I had to leave my cart and run to get it. That was even after a cup of coffee. Maybe I should have had two cups this morning.
I’ve actually decided the real issue is that I need a wife. I need someone to cook, clean, get my daughter to her after-school events, attend PTA events, make sure homework is done and laundry too. Just like almost every other woman out there, I’ve got way too many balls in the air and occasionally they all fall on my head! Did I mention that my husband just got back from a men’s only golf weekend? Here I go again whining. I told myself earlier to stop. Hello, get a grip girl. I should be extraordinarily grateful and counting my blessings. One wonderful way to feel less stressed, have your girlfriends over for breakfast. Make this delectable Peach Upside Down French Toast Casserole the night before, so you can enjoy the morning without stressing.

Peach Upside Down French Toast Casserole
Ingredients
- 1/4 cup SPLENDA® Brown Sugar Blend
- 1 tsp. ground cinnamon
- 3 cups frozen peaches defrosted
- 8 oz. challah bread sliced into 1/2 inch slices
- 3 large eggs lightly beaten
- 6 tbsp. egg whites or egg substitute
- 1 1/2 cups vanilla soy or coconut creamer
- 1 tsp. vanilla extract
- 1/4 tsp. kosher salt
Instructions

Spray a 9 x 13 inch baking pan with non-stick cooking spray.

Pour peaches, SPLENDA® brown sugar blend and cinnamon into the baking pan and toss well to combine. Lay out the peaches in a single layer.

Lay the bread on top. Tear bread to fit into any large gaps.

In a medium bowl, whisk together remaining ingredients and pour over the bread. Press the bread down into the mixture.

Cover with foil and refrigerate overnight.

Take the casserole out for one hour.

Preheat the oven to 350•.

Uncover and bake for 40 minutes.
