School is in full swing, which means I am pulling my hair out over breakfast.  My little one is not an early morning breakfast eater.  She likes to eat breakfast about 9am.  By 9am she has already been in school for an hour.  I must have something very enticing for her to eat in the morning.  Plus it has to be quick.  I am not the type of Mom to get up at 5am in the morning to flip pancakes.  You do not want to see me at 5am, it is scary.  Morning it not exactly my strongest part of the day.  I’m the type of Mom that needs to have everything ready the night before.  We have her back pack ready, clothes picked out, and my coffee cup standing ready for a nice hot cup of java.

I must have a plan for breakfast.  It needs to be something I can make in under 5 minutes.  Overnight Oats are the perfect solution for a school morning.  I like to put breakfast together at night, when my brain is still functioning and not groggy from sleep. I’ll mix up the oats and milk in a pretty jar before heading to bed. I’ll also prep any fruit or toppings too.  The next morning, I can wake up to breakfast already made.  It is a huge time-saver and stress reliever.

Another bonus is that I can tailor the flavor of the overnight oats to what is in my refrigerator or in season.  Right now I’ve got peaches and raspberries.  They look so pretty layered on top of Quaker® Oats.  Then I like to add a little crunchy topping of pecans and tell my daughter she is eating Peach Melba Pie Overnight Oats.  It looks like a beautiful parfait, so she will happily dig in.  Another huge advantage to overnight oats, she can eat them right out of the jar I made them in.  That is right, there is one dish to wash.  That leaves time for my happy dance.

In the Fall, I love to use apples or pumpkin.  Who doesn’t want Pumpkin Pie Overnight Oats for breakfast?  What about Strawberry Shortcake Overnight Oats?  The possibilities are endless.  These would even be perfect for a brunch party.  Mason Jars are popular right now.  Make a bunch of single serving overnight oats in mason jars. Top them with a rainbow of fruit and a little crispy topping, and you have one beautiful, inventive and easy breakfast for a crowd.

Peach Melba Pie Overnight Oats

Ingredients

  • 1 cup Quaker Old Fashioned Oats
  • 1 cup 1% fat milk
  • 1/4 tsp . vanilla extract
  • 1/4 tsp . ground cinnamon
  • Sweetener , optional
  • 1 peach , sliced
  • 10 raspberries
  • 1 tbsp . chopped pecans

Instructions

  1. Stir together the oats, milk, extract, cinnamon and sweetener, if using, in a jar or container.
  2. Cover and set in the refrigerator overnight.
  3. In the morning, top with peaches, raspberries and pecans.

  4. I've seen overnight oats so many places, and I haven't yet tried them out! That has to change. :) I'm a big fan of oatmeal, so I'd try this with blueberries and honey.
  5. LOL I refuse to get up to flip pancakes too. As a matter of fact mine are a tad older now (3rd and 5th grades) and I have trained them to get themselves ready! So oatmeal ready in the fridge is an awesome thing for them! This looks wonderful!

      Hi Laura, I have a feeling my daughter would stand in front of the refrigerator for hours, if she had to get your own breakfast. I need your tips on getting that done.

    LOL this! I can SO relate, cuz I am pulling out my hair every morning too. Breakfast in my crazy house is just the same - it has to be very easy or it just doesn't happen. This looks so delicious - with peaches and also with apples like you suggest. I love the little touch of vanilla too. Yum!
