Do you love reading cookbooks and food magazines? I do. Whenever I check out at the grocery store, I always look to see if there is a new food magazine I need. I just love to read them just like I would read a novel. The problem is, I find so many recipes I want to make, that I could never actually get through the list. Sometimes I do make one and love it. That is what happened with this recipe. This was a Paula Deen recipe that I lightened. It was so easy to lighten that it sometimes makes me wonder why people make food so fattening. Why do it when you can get the same or better flavor using less fattening ingredients? Oh well. It is still one fabulous idea and now it has fewer calories, fat and sugar. That makes it a winner in my book.
I have made this dessert many times now. Peach Cobbler with Blueberry Biscuits is perfect for company. It makes a very large batch. One time I made it ahead and froze it. Then defrosted it and warmed in the oven. Peach Cobbler was still delicious. Now I’ve got a make ahead dessert too. I love that. If you love sweet desserts, you are going to want to add more sugar. This dessert is not overly sweet. I have been making a concerted effort to reduce our sugar intake. With all the new information coming out about sugar, I have made it a top priority. I don’t think I will ever completely cut it out, but I am really happy with our reduction so far. Once you start cutting sugar, many desserts taste too sweet. I cannot tell you how victorious I feel about that. Take that sugar! I still love a sweet dessert, but I am happy to be in control of sugar.
Give Peach Cobbler with Blueberry Biscuits a try for yourself. Remember, you can freeze it, so don’t feel like you have to eat it all at once! It is so good, you will be tempted. Oh, I almost forgot to talk about purple biscuits. Yes, purple biscuits. If you have a little one like mine who loves purple, mix the blueberries into the biscuit mixture after the buttermilk. The blueberries will turn your biscuits purple. If you don’t want purple biscuits, stir the blueberries into the flour mixture then mix in the buttermilk. You will have white biscuits with specks of purple blueberries.
