The Best Pea Salad with Radish and Creamy Dill Dressing

Summer salads can’t get enough. Summer salads, well actually Spring salads to be absolutely correct are happening non-stop in the Food Done Light kitchen. This new Pea Salad with Radish and Creamy Dill Dressing is the latest, and perhaps the greatest. First of all it is absolutely, positively easy to make. Second you can use fresh or frozen peas. Third it is gluten free and vegetarian. In addition it is healthy and low calorie.

Gluten Free, Vegetarian Dilly Pea Salad

While we were visiting my grandparents over Spring Break, my grandmother mentioned a Pea Salad recipe with Dill. Since we had little time to make the pea salad during our visit, I researched the recipe when I got home. It only required a few ingredients and the dressing reminded me of a Pea and Carrot Salad recipe I made last year. However, the spark of color from the radishes were what sold me on the idea of a pea salad with radish.

I took this Pea Salad with me to Ladies night. Isn’t it beautiful? What better way to get some honest opinions then from your friends? The near empty bowl was proof of this delicious spring salad. Pea Salad with Radish and Dill

Ingredients

  • 10 oz fresh peas or frozen , thawed and drained
  • 2/3 cup sliced radishes
  • ¼ cup finely chopped sweet onion
  • 2 tbsp . rice wine vinegar
  • 2 tbsp light sour cream
  • 1 tbsp . chopped fresh dill
  • ½ tsp . kosher salt
  • ¼ tsp . fresh ground black pepper

Instructions

  1. Whisk together vinegar, sour cream, dill, salt and pepper.
  2. Add peas and radishes.
  3. Stir well to combine.
