I’m not sure which of us is more like a kid in the candy store when it comes to Halloween or Christmas decorations, my husband or myself. We are definitely a bad combination for our budget but a great combination for store sales when we are together shopping. On a recent date night we stopped at World Market. We both love this store and were immediately drawn to all the Halloween stuff.  As we were “oohing” and “aahing” over different products, I fell in love with a bag of Halloween pasta with different colored pasta, including black.  I was so giddy over this find.  In fact, I had been talking about wanting to find some squid ink pasta for a Halloween dish and I scored pasta with not only black but red too.  Ha ha!

We walked out of the store with the Halloween pasta and some cute Halloween decorations.  (I can’t forget my 6 pack of beer, too.)  We go all out for Halloween and Christmas.  I wonder if our neighbors cringe when they see all the outdoor decorations coming out.  Hey, at least we waited until October to put the Halloween decorations outside.  The house had already been decorated for about 10 days.  My husband is already eyeing his next outdoor decoration acquisitions.  When we were at the Greenville Zoo they had so many cute blow-up Halloween decorations.  He has a long list of what he wants.

This dish was a real winner with my little one.  She can have some weird issues with casseroles.  She can love everything in a dish but hate when they are all put together.  She really likes all of her food separate while my hubby and I may start with food separated on our plates and end up stirring it all together.  That is so alien to her.  Luckily she liked this one.  It helped that it had sausage in it.

When all else fails, I give her pork or sausage.  She doesn’t care if the sausage is turkey or chicken as long as it tastes like pork sausage.  When she was little we told her all meat was “pork”.  We tease her about it now.  When we had taken her to Singapore almost 2 years ago we had some fantastic duck for lunch.  She kept asking for more “pork” which was duck.  She adored it.

You can make this dish with whatever pasta you want.  Penne, rotini or wagon wheels would work really well.  If you happen to go to World Market, then it is worth buying some of their Halloween pasta for a fun Halloween dinner.

Pasta and Turkey Sausage Bake (Halloween Pasta Bake)

  • 8 oz Halloween pasta or any small elbow pasta
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • 1 cup chopped mushrooms
  • 1 cup chopped green or red peppers
  • 2 garlic cloves minced
  • 12 oz pre-cooked chicken or turkey sausage I used Johnsonville Chicken Sausage Italian Style with Cheese, chopped
  • 1 cup marinara sauce
  • 1 tsp kosher salt divided
  • 1 tsp Italian seasoning
  • ½ tsp fresh ground black pepper
  • 1 cup fat-free milk
  • 2 tbsp whole wheat flour
  • 1 1/4 cup 2% fat shredded sharp cheddar cheese 5 oz.
  • ¼ cup grated parmesan cheese


  1. Preheat oven to 350°. Spray an 11 x 7 inch baking dish with cooking spray.
  2. Cook pasta 1 minute less than package directions. Drain.
  3. In a Dutch oven over medium-high heat, coat pan with cooking spray. Sauté onions, carrots, mushrooms, and peppers for 4 minutes. Add garlic and cook for another minute.
  4. Add sausage, marinara sauce, ½ tsp. salt, pepper and Italian seasonings. Cook for about 2 minutes or until most of liquid has absorbed.
  5. Add pasta to sauce. Pour into baking dish.
  6. In a small saucepan, whisk together milk, flour and ½ tsp. salt. Cook and stir constantly over medium heat for 2 minutes or until thickened. Stir in ¾ cup cheddar cheese.
  7. Pour cheese sauce over pasta.
  8. Sprinkle with remaining cheddar cheese and parmesan cheese.
  9. Bake for 20 minutes. Let stand 5 minutes before serving.
