Hard questions in life – Potato Salad, pasta salad or rice salad? Oh, I want them all. The answer is simple, invite more people over so you can have more food! That way you don’t need to choose. Life is wonderful that way. If you really have to choose, choose this pasta salad. With the sweet, roasted tomatoes, crispy bacon and dark, leafy spinach, each forkful is a mouthful of happiness. The pasta connects all the ingredients into one harmonious salad.
Are you thinking, do I really need to take the time to roast the tomatoes? Yes, yes and yes! Do you remember when tomatoes tasted like tomatoes? Depending on your age, you are either vehemently nodding your head or scratching your head in quizzical thought. I have glorious memories of eating tomato sandwiches when I was little. Tomatoes were perfectly ripe, the texture was sublime (not mushy and not rock hard) and the taste, oh the taste, a little sweet and full of delicious “tomatoness”. Tomatoes, now, are never ripe, always mushy or rock hard and have no flavor. Blah! All because tomato growers wanted to mass produce them. So sad. So roasting tomatoes, replaces some of the sweetness and accentuates the “tomatoness”. If you happen to find gloriously, delicious heirloom tomatoes, you might not need to roast them.
We cannot forget about the bacon! If you want to, you can substitute turkey bacon. Just buy a good quality turkey bacon. There are a couple of brands that are nitrate free and use good quality turkey. I opted to use center cut bacon in this one. Sometimes you just want a little real bacon. Don’t use bacon bits, oh please, oh please, oh please! Make your own. It is so easy and quick. I actually went through a period, a long time ago, when I didn’t like bacon. What? Was I insane? Those days are long gone. I actually don’t really like to eat a whole piece of bacon by itself but put a crispy, salty, porky piece into something and poof, magic happens.
The spinach is hardly a throw away in the dish. Sure spinach is exceedingly good for you but it also adds flavor. It balances the fattiness of the bacon and the sweetness of the roasted tomatoes. It adds a natural note to the dish and of course, vibrant color. Spinach gives the dish more volume so you can eat more with fewer calories. Thank you dear spinach.
