I have been holding out on you. In fact I’ve have had this recipe for truffle fries ready for a few months now but wanted to get through all my summer recipes before I gave it to you. So tada, here is a magical and utterly scrumptious recipe for my favorite oven baked french fries. These seriously addictive morsels of crispy potatoes covered in Parmesan cheese and truffle salt will set your heart a flutter.
I mistakenly thought my husband and I would get to enjoy these bad boys by ourselves, and my little one would snub her nose at them. Oh no siree Bob, she took one bite and tried to take all the rest of the truffle fries. Then asked if I would make them again the next night. A truffle fiend has been born. One bite and you will be hooked on these Oven Fried Spiral Parmesan Truffle Fries, too.
I am a huge lover of all things truffle, but the price tag on these babies are staggering. Luckily there are more economical ways to enjoy the taste of truffles. I keep a very small bottle of truffle oil in my pantry and a small bottle of truffle salt (double bagged) in my refrigerator. Seriously, buy the smallest bottle of truffle oil you can find. You will use it sparingly, so it will last a long time. Same for the truffle salt, a little goes a long way. I have had mine for years now. I keep it sealed in two plastic bags to keep it fresh and keep the rest of the refrigerator from smelling like truffles. These are the one I have Fusion Black Truffle Sea Salt, 4.0-Ounce Jar and TruffleHunter White Truffle Oil (3.4 Oz).
Truffle salt and oil makes great Christmas gifts or stocking stuffers by the way. That is when I first got my truffle salt. Love that Santa left me some. Another note about the recipe, I made these french fries using the smallest spiral setting for the potatoes. You can certainly use a larger one and make thicker fries. These are more shoestring size. Use whatever size you prefer. You might want to make a double batch though. They are going to be gone in seconds.

Healthy Oven Fried Spiral Truffle Parmesan Fries
- 2 large baking potatoes
- 1 tbsp . oil
- ½ tsp . kosher salt
- ¼ tsp . fresh ground black pepper
- 1 tsp . truffle oil
- 2 tbsp . grated Parmesan cheese
- ½ tsp . truffle salt
- 2 tbsp . finely chopped parsley
Preheat oven to 450•. Place large baking sheet in the oven while it preheats.
Spiral cut potatoes and place in cold water.
Drain and dry off the potatoes.
Place in a bowl and mix with oil, salt and pepper.
Pour onto baking sheet and spread out.
Bake for 15 minutes.
Flip over and bake for another 10 to 15 minutes.
Toss with remaining ingredients and serve.
