Oven Fried (Baked) Pickle Chips with Sweet Horseradish Sauce

Crisp Oven Fried Bread and Butter Pickle Chips with delicious tang and sweetness. Dip them in a sweet and spicy horseradish sauce for a flavor explosion.

I remember the first time I had fried pickle chips. It was in Macy’s or Lord and Taylor in New York City about 20 years ago. Every year I would visit my grandmother, who lived in New Jersey, and we would spend days walking and sightseeing through New York. On one of these trips, we needed a little snack and stopped at the food counter in the department store. I saw pickle chips and was intrigued. I had never heard of them before. Oh man were they good. They were crisp and tangy. I didn’t see them on another menu until a year or two ago. Now it seems like pickle chips have gotten popular. That food counter was way ahead of their time.

To this day I still love fried pickles, but they no longer fit into our healthier lifestyle. It was time to re-create these little gems; so we do not have to live without them any longer. I started with some home-made bread and butter pickles.  You can make your own or use store-bought.  They are incredibly easy to make, though.  Then it was a quick dredge in all the normal suspects flour, egg and panko.  The real trick here is time.  After you bread them, put them in the refrigerator.  You want the coating to adhere to the pickle.  After that, the oven and non-stick cooking spray do all the work of crisping up these babies.

Sweet and tangy pickle chips deserve a sweet and zesty sauce to dip them in. The really big surprise for me, was that my pickle-hating husband loved them. In fact, he ate the whole plate. Oven Fried (Baked) Pickle Chips with Sweet Horseradish Sauce

Ingredients

  • 1 cup low sugar bread and butter pickles about 40
  • 3 tbsp flour can be whole wheat or a mix
  • 1/4 cup egg whites
  • 1/2 cup panko bread crumbs
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Sweet & Spicy Horseradish Sauce:

  • 1/4 cup low-fat mayonnaise
  • 1/4 cup 2% fat plain Greek yogurt
  • 3 tbsp water
  • 2 tsp tomato paste
  • 2 tsp horseradish
  • 2 tsp rice wine vinegar
  • 2 tsp SPLENDA® Brown Sugar Blend
  • 3/4 tsp Worcestershire Sauce
  • 1/2 tsp kosher salt
  • 1/4 tsp garlic powder

Instructions

  1. Place a large wire rack on top of a baking sheet.
  2. Place flour in a shallow dish. Place egg whites in another shallow dish.
  3. Mix together panko, salt, pepper, garlic and onion powder in another shallow dish.
  4. Dredge pickles in flour, then egg whites and then panko. Press the panko crumbs on both sides.
  5. Lay onto wire rack.
  6. Place into the refrigerator for 1 hour. (Now is a good time to make the sauce. See below for instructions)
  7. Preheat oven to 450°.
  8. Spray the pickles with non-stick cooking spray.
  9. Bake for 12 minutes.

For Sauce:

  1. Whisk all ingredients together in a small bowl. Cover and place in the refrigerator for the flavors to come together.
