Healthy, low fat Orange Cinnamon Muffins

Orange Cinnamon Muffins are a healthy and low fat muffin perfect for a snack. They are also simple thanks to a box of cake mix.

I have been seeing lots of recipes using boxed cake mixes lately.  For years now I have refused to use a box to make a cake and vowed never to again.  Like all good things, this vow must come to an end.  However, I haven’t actually made a cake from it so my vow is somewhat intact.  The reason I choose to make something with a boxed cake mix is that you can add different ingredients to it and still end up with a light, moist cake or in this case muffin.  I’ve been experimenting with different applications and have been really happy with the results.

I started out with just Greek Yogurt, Fage, of course and decided to up the ante on this one.  Since I had some cottage cheese in the refrigerator, I pureed it and put it in the mix.  I love to get a little extra protein in a treat.  These actually ended up being pretty healthy muffins.  They have some fiber thanks to flax-seed and protein from the Greek yogurt and cottage cheese.  They also freeze well.  They are in my freezer now waiting for my hubby to return to work in a few weeks and bring along a snack for his office.

My little one was the inspiration for the picture above.  She took a bite of the muffin and put it on the rack.  Then asked me excitedly to take the picture.  “Look Mommy it will look like someone took a bite”.  She was quite proud of herself for coming up with the idea.  I didn’t want to burst her bubble that it has been done before.  At least this one has the small bite of a 6-year-old.

These little muffins would be fantastic for a brunch.  You can make them in different shapes depending on the pans you have.  Any fresh oranges will do from clementines to mandarins to Cara Cara or the good old navel.  I liked the addition of the fresh fruit to freshen up the boxed cake mix and provide a little extra vitamins.  Try these little tasty morsels for yourself.  They won’t taste liked they came from a boxed cake mix!

Orange Cinnamon Muffins

    For Muffin:
  • 1 box Orange Cake Mix (I used Duncan Hines)
  • 1/4 cup ground flax
  • 1 (7 oz) container of Fage 2% fat Greek Yogurt
  • 1/2 cup 2% fat cottage cheese
  • 1 egg or equivalent in egg substitute (I did use egg substitute)
  • 3/4 cup water
  • 1 tsp. orange zest
  • 1/2 cup chopped orange segments
  • 1 tsp. ground cinnamon
  • 1/2 cup cinnamon chips
  • For Topping:
  • 1/4 cup ground flax-seed
  • 1/2 cup quick cooking oats
  • 1/2 tsp. ground cinnamon
  • 1 tbsp. low sugar sweet orange marmalade, melted


  1. Preheat oven to 375°.
  2. Spray two 12-cup muffin pans with non-stick baking spray.
  3. In a large bowl, mix all the ingredients (cake mix through cinnamon chips) together.
  4. In a small bowl, mix together ingredients for topping.
  5. Fill cups 2/3 full with batter. Place 1 tsp. topping onto each muffin.
  6. Bake for 20 to 25 minutes or until done.

  1. These do look wonderful and I'd love to make them, However I also don't use mixes, and actually you can hardly find them here. We all make everything from scratch. But as I said before - they look WONDERFUL !!

    The photography is amazing! On the same level as Food 52. Great job. The recipe is creative, easy and perfect when a friend is coming for a good autumn muffin, but I want to try now because it seems like a comforting thing with one of these and a cup of coffee by myself....aaaah.
