Baked Orange Chocolate Chip Donuts

Baked Orange Chocolate Chip Donuts are a healthy way to start the day or have for a snack.

Sometimes you have to get creative to keep food you love.  Let’s face it, on a diet you cannot have your cake and eat it too.  I had been having a craving for an orange chocolate chip cake I love, but cake is hard to portion control.  Since portion control is my new best friend, I thought about cupcakes.  Sure it is easy to portion control, but what is a cupcake without a lot of icing.  So taa daa, baked orange chocolate chip donuts.  A healthy 173 calorie treat, great for an after school snack or a special treat breakfast.

Fresh orange juice is a must in this recipe. I bought a couple of oranges, zested them then juiced them.  Don’t be tempted to skip this step.  It is so worth it and will enhance that fresh, homemade taste.  Not only is orange juice in the batter but I slathered it on the baked donuts before smothering them with chocolate.  Who can resist the extraordinary combination of orange and chocolate.  It is intoxicating, exhilarating.

Fair warning about these donuts – they are so good you need to have a plan to share them.  Have one then get them out of your house.  Give them to friends, take them to work, share with your family – otherwise, they will call your name and put you into a hypnotic state.  They will make you eat another and another. Thank goodness my husband took them into work. I had no will power where these were concerned. Sure at 173 calories, I could easily fit one into my diet but two, three – oops.

How did I lighten these up, you may be asking?  Whole Wheat Pastry Flour to start with.  I like to use Bob’s Red Mill,  Whole wheat flour can be very heavy but the pastry flour helps boast the nutrition and won’t weigh the donut down.  I also substituted a little sugar for Domino sugar/stevia mix.  I cannot forget the star ingredient Fage 2% fat Greek Yogurt.  Fage has been a life saver for my baked treats.  If you have had one brand of Greek Yogurt and didn’t like it, try another.  They really do taste different.

So today, back on the eating healthy train.  I was afraid to get on the scale this morning.  That is never a good sign.  Don’t worry, it wasn’t the donuts.  It was that I baked something everyday for 2 weeks.  I have now made a plan to bake only once a week and send it to work with my hubby.  Do you have a plan to get back to healthy eating after falling off the healthy train?  Be sure to pin this recipe so you can find it later.

Hi Jaya, I have not personally tried this but I know a lot of vegan bloggers that use 1 tbsp. flax meal mixed with 3 tbsp. water. Let it sit for 2 minutes until it congeals. You can also try 1 banana, pureed or 1/4 cup applesauce. I would love to hear how it turns out.
