Cookies, cookies, cookies! Is it just me or do cookies taste better when they are “Christmas” cookies? Sure I like a cookie ever now and then during the year; but come Christmas time, I love cookies. Why is that? These particular cookies have been a tradition in our home for a few years. A dear friend gave me the recipe for what she called West Virginia’s Finest Cookies. It was love at first bite for me. They had some of my favorite cookie ingredients; oatmeal, coconut and nuts. I’ve lightened them up and present to you Oatmeal, Coconut Cereal Cookies.
Maybe it is the childhood memories of leaving cookies for Santa, that make me believe Christmas cookies taste better. Maybe it’s because I tend to only bake my favorite cookie recipes at Christmas. I deprive myself of the pleasure of their company the rest of the year. Maybe there is just something magical that happens at Christmas time and cookies taste extra scrumptious.
My little one gets so excited about leaving cookies and milk for Santa. It is the last thing we do before she goes to bed Christmas Eve. We also have to leave a couple of carrots for the reindeer, of course. My daughter wouldn’t think of forgetting Santa’s reindeer. She loves reading the note from Santa the next day. He always loves the cookies and is glad she is a good girl. The reindeer always eat the carrots but leave a little stub with their teeth marks.
One of the wonderful things about Christmas cookies are the memories they invoke. I always think of the friend that first gave me the recipes for these. I love to remember the times my Mom, little one and I have gotten together to bake cookies. It’s the little traditions that mean the most. Oatmeal, Coconut Cereal Cookies
- ¼ cup regular butter
- ½ cup sugar or ¼ cup sugar and 2 tbsp stevia
- ½ cup brown sugar
- 1 egg
- ¼ cup vegetable oil
- ¼ cup fat-free Greek yogurt
- 1 cup all-purpose unbleached flour
- ¾ cup whole wheat pastry flour
- ½ tsp. baking soda
- ½ tsp. kosher salt
- ½ cup quick cooking oatmeal
- ½ cup corn flakes
- ¼ cup unsweetened shredded coconut
- 1 tsp. vanilla
- ¼ cup unsalted peanuts crushed
- Preheat oven to 375°.
- In the bowl of a stand mixer, cream together butter, granulated sugar, sugar/stevia mix and brown sugar until light and fluffy about 3 minutes.
- Stir in egg and Greek yogurt until combined.
- In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda and salt.
- Turn mixer to low and add flour mixture. Mix until just combined.
- Stir in oatmeal, corn flakes, coconut, vanilla and nuts.
- Using a tablespoon, spoon batter onto baking sheets, leaving about 1 inch around each cookie.
- Bake for 12-15 minutes.
- Place baking sheet onto a wire rack and cool for 5 minutes.
- Then place cookies directly onto the wire rack to cool completely.
