I am so excited!  This year we have decided to grow cucumbers.  I am actually using the “royal we”.  In reality I’m not doing anything.  My husband is growing them for me.  He loves to garden, and I hate it.  I don’t know why.  You would think that I would love it; since I love to cook with fresh ingredients.  My husband loves to garden, because it reminds him of his Mom.  Sadly she passed before we had met, so I never got the chance to know her.

I have seen her magnificent gardens at his father’s apartment in Singapore.  Wow!  She had a seriously green thumb.  There are loads of orchids hanging  off an overhang.  She has a large plant she grew from a clipping she had cut while visiting the Biltmore Estates.  She carried it all the way home to Singapore and planted it. The plant clipping would have died long before I even got it home.

Last year we had fantastic luck with jalapeno, basil and tomatoes.  I am really hoping to see the cucumbers do well this year.  Of course, it is somewhat dependent on me remembering to water  them when my husband is on a business trip.  If it doesn’t talk, meow or bark, I cannot remember to take care of it.  They really need to invent a plant that will tell you when it needs water.  I might be successful with a plant like that.  There is still a chance I could still kill it.  I would probably over water it.

I am really excited about the cucumbers as  we eat a lot of them.  Plus I have been wanting to make my own pickles.  In fact, I have pickled so many different vegetables, but not cucumbers.  I don’t know why.  However, I am glad I finally made them.  First I started with my favorite kind, bread and butter pickles.  I love the sweet and tang all in one bite.  Even though pickles are usually low in calorie, bread and butter pickles are significantly higher because of the amount of sugar used in making them.

An easy solution to that was to swap the sugar for SPLENDA® Sweeteners.  SPLENDA® No Calorie Sweetener  adds the right amount of sweetness without the calories. No Sugar Added Bread and Butter Pickles

  • 1 lb Kirby cucumbers cut into 1/4-inch rounds
  • 1 tbsp kosher salt
  • 1/2 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 1 cup SPLENDA® No Calorie Sweetener Granulated
  • 1 tsp whole mustard seed
  • 1/2 tsp whole black peppercorns
  • 1/2 tsp whole fennel seeds
  • 1/8 tsp turmeric


  1. Place cucumber slices into a large colander and toss with the salt. Place colander into a large bowl and put in the refrigerator for 2 hours.
  2. Rinse the cucumber well to remove all the salt.
  3. Drain the cucumber and pour into the large bowl.
  4. In a medium saucepan, bring vinegar and remaining ingredients to a simmer over medium heat. Stir until SPLENDA® No Calorie Sweetener, Granulated dissolves.
  5. Pour vinegar mixture over the cucumbers and let sit for one hour.
  6. Cover and refrigerate for at least 24 hours.

Your husband sounds a lot like mine, my husband loves to do the gardening. He set up a herb garden for me and a few tomato plants. If I stepped in to help, I'm sure they would die.

    D you happen to know the sodium content of this recipe? Love bread and butter pickles but the jars from the store are so high. In sodium. I have to watch my sodium intake as well.

      Hi Jennifer, I don't know exactly. I usually use for calories and such. They will figure out the sodium for you, but I don't know sodium as well as I know nutritional value so I do not know how accurate it is. I am also not sure how much the cucumbers absorb and how much is washed off. Sorry I cannot give the specifics. If I come across a low-sodium version, I will let you know.
