I want to send out a big thank you to everyone that requested to be a part of the Healthy Challenge. It is a work in progress, as I try to figure out the best way to do it. Last week’s goal was to lose one pound and I did do it. I had a lot of help from a stomach bug that did not want to go away. I got it last Wednesday night and yesterday was the first day I was really hungry and not nauseous. While it was great at keeping my food in take in check, I knew my metabolism was going to slow down.
Is Mother’s Day going to be a challenge for you to eat healthfully or do you give yourself a day off? I usually am somewhere in the middle. I don’t measure or keep track of what I eat but our menu is healthy. So hopefully while I won’t lose anything that day, I won’t gain either. Next week my goal is to get back to all my workouts. I am going to spin tomorrow. I am going to spin tomorrow. I am going to spin tomorrow! If I keep repeating it enough, it will happen. I did go to the gym twice this week but didn’t have the energy to get through my workout on Monday. It was pitiful. Today was much better. I feel stronger! So I would like to lose one pound and go to the gym three times and play tennis once. That is my goal. My Mother’s Day menu will actually help you stay on track this week. I was really happy with the way the Lemon Rosemary Scones came out. If I did not know they were lower calorie and fat, I would never have guessed from the taste and texture. The Whole Wheat Strawberry Cream Cheese Pull Apart Bread with Nutella Glaze is a delicious breakfast and is so quick and easy with the help of Pillsbury’s Reduced Fat Whole Wheat Biscuits. Strawberry Wonton Napoleons are so easy even your signficant other or kids could make them. They take all of about 15 minutes to make. The wontons come out so crispy, you won’t miss the puff pastry.
