Mini Strawberry and Blueberry Ice Cream Pies

Deliciously cute Skinny Mini Ice Cream Pies with strawberries and blueberries #icecream #icecreampie #lowfaticecream #weightwatchersdessert #july4recipeWhen it comes to July 4th, I always love to make red, white and blue desserts.  I know it is kind of predictable but I love coming up with different desserts and ways to do it.  These Mini Ice Cream Pies were inspired by my Mom.  She requested an Ice Cream Pie for Mother’s Day.  Sure it is delicious with 2 1/2 cups of walnuts in the crust.  It gave me an idea to lighten it up.

I made some with strawberries and some with blueberries to continue my tradition of red, white and blue desserts.  They are quite cute and the perfect size to snack on.  My daughter decided to help me prep these for the picture.  She helped with the chocolate sauce.  That caused quite a few giggles especially as I accidentally squirted a large amount on one.  She was very proud of her staging of the pies with whip cream and cherries.

Deliciously cute Skinny Mini Ice Cream Pies with strawberries and blueberries #icecream #icecreampie #lowfaticecream #weightwatchersdessert #july4recipeAs I started taking pictures, my daughter was standing right next to me waiting to take a bite of one of the pies.  When I was done I gave her one to eat and put the rest away.  She took one bite then put it on her plate and picked up the camera and started taking pictures.  She was rearranging the props I had used, putting them in different positions.  She would turn the camera to different angles and different heights.  It was so cute.  She was extremely proud of herself and wanted to show me her pictures.  After she was done, she ate the mini ice cream pie.

I love creating memories like that with her.  They probably mean more to me than her right now.  She doesn’t know how much I love that she still wants to hold my hand whenever we walk somewhere.  I know I’ll be the “uncool” Mom soon enough.  Then I’ll have these Mini Ice Cream Pies and pictures to remember when my little girl wanted to be just like her Mom.

Mini Strawberry and Blueberry Ice Cream Pies #chocolateparty

  • 8 sugar cones
  • 1/2 cup walnuts
  • 1 egg white
  • 2 tbsp. light butter, melted
  • 1 1/2 cups low-fat vanilla ice cream (I used Edy's Slow Churned), divided
  • 6 tbsp. mashed blueberries
  • 2/3 cup lite cool whip or light whip cream
  • 14 Fresh sweet cherries
  • 5 tbsp. chocolate sauce
  • 6 tbsp. mashed strawberries


  1. Let ice cream soften just enough so that you can stir it. Do not let it melt. Divide equally into two medium bowls.
  2. Add mashed blueberries to one bowl and mashed strawberries to the other. Mix well and place both bowls bake in the freezer.
  3. Preheat oven to 400°.
  4. In a food processor, pulse sugar cones and walnuts until they are crumbs. Add butter and egg white and pulse to combine.
  5. Spray a 12-cup muffin tin and 2 cups from another muffin tin with cooking spray.
  6. Place about 2 tbsp. of the crumb mixture into each cup and press onto the bottom and partially up the side.
  7. Bake for 5 minutes. Then cool completely.
  8. Take the bowls of ice cream out of the refrigerator and let soften slightly.
  9. Put about 3 tbsp of the strawberry ice cream in 7 cups and about 3 tbsp of blueberry in the remaining 7 cups. Cover with plastic wrap and freeze until ready to use.
  10. When ready to serve, place on a plate and drizzle with chocolate sauce, cool whip and cherries.
