Forgive me, but this is going to be short. My Father-in-law who lives in Singapore is in the ICU in the hospital on a ventilator. My husband just arrived and we are trying to determine if I will be flying out. I am trying to close out some work. We would love any prayers and positive thoughts you can spare. I am as always so grateful for the support of you all. I know many of you have health issues yourself or are the caregivers for a loved one with healthy issues.
As for this salad, it is divine even though the colors may not look the most appetizing. I should have thought of how the orange color of the sweet potatoes would look with the slightly green, cilantro chipotle sauce. It will look better in person, I assure you. More importantly, it tastes fantastic. Give it a try and let me know how it turns out for you.

Mexican Sweet Potato Salad
- 1 ½ lbs . sweet potatoes , cut into ½ inch chunks
- ½ tbsp . olive oil
- 1 tsp . kosher salt , divided
- 1/8 tsp . fresh ground black pepper
- ½ cup finely diced onion
- ½ cup finely diced celery
- ¼ cup reduced fat olive oil mayonnaise
- ¼ cup 2% fat Greek yogurt
- 2 tbsp . fresh lemon juice
- 3 garlic cloves , chopped
- ¼ cup cilantro
- 1 tbsp . chipotle sauce
- 1 tsp . ground cumin
- 1 tsp . dried oregano
Preheat oven to 425•.
Coat sweet potatoes in oil, ½ tsp. kosher salt and pepper. Pour onto baking sheet.
Bake for 20 to 25 minutes, until tender.
Add to a bowl and cool slightly.
Mix in onion and celery.
In a food processor, puree mayonnaise through oregano and remaining ½ tsp. kosher salt.
Pour into sweet potatoes and mix well.
Cover and refrigerate until cold.
