Healthy Veggie wrap with hummus, feta and Greek dressing

Meet my favorite lunch, a Mediterranean Hummus Veggie Wrap. I first had a wrap like this from my local grocery store. This veggie wrap particularly caught my eye when I saw it had hummus and feta cheese. I instantly knew this was what I wanted for lunch. In addition to hummus and feta, I loved that this was a veggie wrap. In fact, I find I am less hungry when I eat a vegetarian lunch. Let me tell you, that came as quite a surprise to me. Usually I like to have minimal carbs at lunch and higher protein. Well surprise, surprise this wrap keeps me fuller for longer.  Therefore I made it a go to lunch.
Low Calorie, Vegetarian Hummus Wrap with veggies and Greek dressing

Given my new love of this veggie wrap for lunch, I wanted to make it at home. I am certainly  not going to the grocery store everyday. In addition, I could make my own Greek dressing, so that I could control the calories and fat coming from the dressing.  If I happen to have homemade hummus in the fridge, I will use that. On days I am feeling lazy, I can pick up premade hummus from the store. Give this veggie wrap and try and keep satisfied until dinner time.

Mediterranean Hummus Veggie Wrap

Ingredients

  • 3 tbsp hummus
  • 1 cup spinach
  • 1 cup lettuce
  • ¼ cup cucumber
  • ¼ cup tomato
  • ¼ cup shredded carrots
  • 2 tbsp onions
  • 2 tbsp chopped olives
  • 1 oz crumbled feta
  • 1 tbsp reduced fat Greek dressing
  • 1 light spinach wrap

Instructions

  1. Smear hummus onto the wrap.
  2. In a resealable plastic bag, place spinach through dressing.
  3. Close bag and shake to evenly distribute dressing.
  4. Pour onto the wrap.
  5. Fold ends over the salad.
  6. Place front of wrap over salad and tightly roll up like a burrito.
