It’s so fresh, refreshing and a tad exciting. Yes, it is this Mango Salad, and I have fallen deeply in love. First you encounter the sweetness from the ripe mango.  When picking out a ripe mango gently squeeze it. The mango should give slightly while not be mushy or stone hard. Next your taste buds focus on the tartness of a green apple and the lime juice in the dressing. Meanwhile your mouth is happily crunching on red pepper. Not to be outdone is the creaminess of the black beans. Finally the zest from onions and cumin. As a result, you have the perfect salad.

Did I forget to talk about the freshness of the cilantro? In fact I did. Let’s remedy that right now. Fresh herbs are a fabulous way to add flavor without calories. After taking a bite of mango salad you will instantly be transported to a tropical island, at least in your mind. I have yet to figure out how to magically transport you. It would be especially nice if someone would invent a magic transportation system that after taking a bite of food would send you directly to the place the food reminds you of.  A bite of this salad would put me somewhere in the Caribbean or Bahamas. In fact mango salad always has that effect on me.

Mango Black Bean Salad

Ingredients

  • 3 tbsp lime juice
  • 1 tsp honey
  • ¼ tsp ground cumin
  • ¾ tsp kosher salt
  • ¼ tsp fresh ground black pepper
  • 3 tbsp olive oil
  • 2 mangoes , sliced
  • 1 small green apple , sliced
  • 1 red pepper , sliced
  • 1 small sweet onion , sliced
  • 1 ½ cups black beans
  • ¼ cup cilantro

Instructions

  1. In a large bowl, whisk together lime juice, honey, cumin, salt and pepper.
  2. Whisk in olive oil.
  3. Add remaining ingredients to bowl and gently toss to combine.
  4. Cover and refrigerate for 1 hr.
