Baked Eggs & Ham So easy and quick to feed guests for breakfast

Snazzy! That is what I think of this recipe. It looks so pretty and fancy, but is so simple and quick to make. That makes Low Carb Baked Eggs and Ham snazzy in my mind.  When we have family staying over, I stress about breakfast. You all know I am not a morning person. I dread getting up every single morning. The pressure is really on when we have guests staying over, and I need to get moving right away. People are hungry, and I need to get breakfast on the table in a hurry. Specifically I need a breakfast I can put together without my mind firing on all cylinders, even before I have finished my first cup of coffee, gasp! Thank goodness these healthy Baked Eggs and Ham are perfect for the occasion.

Delicious and comes together in minutes. Love that it is low carb and healthy too.

Literally you pop all the ingredients into an oven safe ramekin and bake. I added a little chopped tomato, because I love, love, love tomato with eggs. I am always looking to add vegetables to any dish. In this case I used NatureRaised® Farms Uncured Ham I picked up from Sam’s Club in the deli section. I needed a lot of ham and a lot of eggs. I can get both at a reasonable price at Sam’s Club. In addition I might have snacked on a sample or two while I was there. Specifically I loved that there are no antibiotics, nitrates or added hormones. It is also comes in a three pack so I only had to open what I was going to use right away. Love that the rest can stay fresh for sandwiches the next day.

Love these breakfast bowls of goodness. The tips of the ham get a little crispy, yum! They provide a scrumptious cradle for the runny eggs. A sprinkle of Parmesan cheese and fresh basil add the final zing to this delicious breakfast. You could serve the ramekins on a pretty plate. Remember they will be hot coming out of the oven. Place the ramekins on a baking sheet and pop them all into the oven at once. That way everyone can enjoy  hot baked eggs and ham breakfast at once.

Low Carb Baked Ham & Eggs with Tomato

Ingredients

  • 8 slices NatureRaised Smoked Sliced Ham
  • 1 cup chopped tomatoes
  • 8 eggs
  • ¼ cup grated Parmesan cheese
  • ½ tsp . kosher salt
  • ¼ tsp . fresh ground black pepper
  • 1 tbsp . chopped basil

Instructions

  1. Preheat oven to 375•. Spray 4 (16 oz.) ramekins with non-stick spray.
  2. Line each ramekin with two ham slices.
  3. Add ¼ cup tomatoes on top of each.
  4. Gently crack two eggs into each bowl.
  5. Sprinkle 1 tbsp. Parmesan cheese over the eggs.
  6. Sprinkle with salt and pepper.
  7. Bake for 15 to 20 minutes.
  8. Top with basil and serve.

    I really enjoy the convenience of cooking my breakfast all 1 dish. It makes cleaning up a breeze and makes a good change from serving on a plate. The baked ham looks great.
