A champagne Jello Parfait makes me a little giddy and not just because of the champagne in them. (Although be aware you are getting a quarter of a cup of champagne in each serving.) In the first place, they are helping me beat back my post-Christmas doldrums with a bit of whimsy. Whimsy, how I need it in my life right now! Second, they look fancy but are especially easy to make. Then there is the fact one serving is only 90 calories. Should I repeat that? Last but not least, they are perfect for Valentine’s Day.
Last year, Food Done Light, came to feel like a job instead of a passion. Somewhere along the way, I had lost my path and motivation and was taking everything entirely too seriously and personally. It started feeling more like an anchor pulling me down instead of lifting me up. Suddenly I was no longer cooking for fun or to learn. I was simply cooking to fill a spot on a calendar. That was hardly surprising given the stress of losing my father in law and my husband losing his job. However stress, guilt and sadness drive me to eating potato chips, and lots of them.
Rather than give up, I decided to “go back to my roots”. First was to bring back some fun, some whimsy. This Champagne Jello Parfait gives me just that. These are a fun dessert, not something you are going to eat every day. The glasses look like champagne just poured from the bottle. How cute would it be to toast with these? Second, four ingredients are all you need to make the champagne jello. Literally if you can boil water, you can make this low calorie dessert. Of course, that leads to the fact that they are only 90 calories, 61 without the whipped yogurt cream. Consequently, I can enjoy every single spoonful without a single ounce of guilt for a Valentine’s Day dessert and so can you. Beat back your own doldrums and add a little low calorie whimsy to your day with a Champagne Jello Parfait.

Champagne Jello Parfaits
Ingredients
- 1 (.25oz) envelope unflavored gelatin
- 1 cup cold champagne
- 1 cup boiling water
- 1 tbsp agave
- 4 whole strawberries each cut into four slices
- 2 tbsp heavy whipping cream
- 2 tbsp 2% fat Greek yogurt
- drop vanilla extract
Instructions

Place cold champagne in a large heat proof measuring glass (at least 4 cups)

Sprinkle gelatin over the cold champagne and let sit for 1 minute.

Gently stir in hot water until gelatin has completely dissolved.

Stir in agave.

Pour into four chilled champagne glasses.

Place four slices of strawberry in each glass.

Refrigerate until firm, about 3 hours.

Place heavy cream and yogurt into a cold bowl.

Whisk until soft peaks begin to form.

Add extract and whip in.

Top each champagne glass with about a tablespoon of whipped yogurt cream.
