I miss having a fully loaded baked potato.  You know the one with butter, sour cream, bacon, cheese and chives.  Technically I could have it but as much as I miss it, I don’t think it is worth the calories and fat.  So, time to think outside the box and come up with something with all the flavors without the calorie splurge.  That is where Loaded Sweet Potato Fries Bites comes in.  I can put a little bit of those wonderful flavors on top of a sweet potato waffle fry and enjoy the delectable flavor combination without a huge baked potato.

These, Loaded Sweet Potato Fries Bites, will be  a huge hit at any party.  Bacon always seems to elicit groans of pleasure.  It’s one of those universally loved foods.  Add cheese and some ranch dressing and you will have people scrapping to get the last bite.  There will be no polite banter between your guests offering each other the last Loaded Sweet Potato Fries Bite.  There will be pushing and shoving as they race to beat each other to the last one.  There will be groans, not of pleasure, but of horror that they are gone.  A chorus of “No!”  will fill the air.  How can the party go one with these delectable bites gone?  Quick whip up another batch before the stampede leaves your home.

Ingredients

  • 1 package (20 oz. ) frozen sweet potato waffle fries
  • 2 oz. shredded 75% reduced fat sharp cheddar cheese
  • 6 slices cooked center cut bacon, crumbled (you can substitute turkey bacon)
  • ½ cup 0% fat Greek yogurt
  • ½ tsp. ranch dressing mix
  • ¼ cup chopped chives

Instructions

  1. Bake waffle fries according to manufacturer’s directions.
  2. Top each sweet potato with bacon and cheese.
  3. Mix yogurt and ranch dressing mix together.
  4. Drizzle or spoon ranch dressing yogurt over fries and sprinkle chives.
  5. Serve immediately.

    It's hard to choose ONE spice, but I'd probably say Cayenne pepper has to be closest to the top, there's nothing I can think of that it wouldn't add GOOD flavor to ;)
