Lightened yellow cupcakes filled with a fresh strawberries and topped with a yogurt frosting are easy to make with your family.
My daughter has been asking to make cupcakes for a while now, but life has been so busy. I wasn’t sure how we were going to fit it in. Then I saw a recipe for making six cupcakes out of a Pillsbury™ cake mix. Well that I could fit in. I picked up a yellow cake mix at Walmart as well as some frosting and fresh strawberries to decorate with. Having a Pillsbury™ cake mix in the pantry is a great time saver and allows us to have some spur of the moment fun with baking.
I briefly thought about making those adorable rose strawberries. Have you seen watched the You Tube videos to make them? I was laughing so hard when I tried it. They make it look so easy, but it is so hard. My strawberry looked like a deformed blob. I needed something simple that my little one could make. She could get your own knife out and slice some strawberries to make a cut decoration on top. This is something anyone can do. You don’t need a degree in food decorating to make them.
The other bonus was that I had half a box of cake mix left. We can make cupcakes again. I loved only having six to share with my family. It meant we were enjoying a delicious, fresh cupcake and not devouring more than we needed. Plus the cake mixes are inexpensive. My wallet really appreciated that. It has been a tough budget month with lots of extra vet bills for both our cat and dog. We needed a little sunshine in the form of a strawberry cupcake to perk us up.
You may have noticed I substituted Greek yogurt for oil in this recipe. It makes them lower in calories and fat. I also swapped half the frosting for Greek yogurt, too. Strawberry Surprise Cupcakes
Ingredients
- 1 cup Pillsbury TM yellow cake mix
- 1/3 cup water
- 3 tbsp 2% fat plain Greek yogurt
- 1 egg
- 9 strawberries hulled, divided
- 1/4 cup Pillsbury Strawberry Frosting
- 1/4 cup non-fat strawberry Greek yogurt
Instructions

Preheat oven to 350*. Insert six cupcake wrappers into a muffin tin.

In a medium bowl, mix together cake mix, water, yogurt and egg.

Beat for 2 minutes on medium speed.

Fill cupcake wrappers half way.

Push in a whole strawberry into each cupcake.

Top with remaining batter.

Bake for 19 to 23 minutes.

Cool pan on a wire rack for 5 minutes.

Then place cupcakes directly on wire rack and cool completely.

In a small bowl, mix together frosting and yogurt.

Spread onto each cupcake.

Slice the remaining two strawberries into four pieces each.

Top each cupcake with two slices of strawberries.
