Ham Salad (Low Calorie, Low Fat)

Take your leftover ham and make a delicious, lightened Ham Salad .  It is one of my favorite sandwiches, plus it is low calorie and low fat.

Ham salad is usually my request for Mother’s Day.  I know you are probably thinking, “Ham salad, what is special about that?”.   There really is nothing special about it; I just love it.  A ham sandwich is my favorite to begin with but when you mix ham with just a few ingredients, it becomes magical, at least to me.  🙂  I love to put the ham salad on a small piece of multi-grain bread.  Sometimes I will go crazy and put a piece of cucumber or brie on the ham salad sandwich.  I like to live on the wild side.

Being a Mommy has totally changed me and my life.  I am what you would call an “older” mommy.  Since I was 37 years old when  our daughter was born.  We had not planned on waiting quite that long but it took us a long time to get pregnant.  I went from one day thinking that I really didn’t want kids to the next day wanting one right now.  Three or four years later we finally had our daughter.  She was well worth the wait.  Being an older Mommy definitely has a lot of advantages.  I had a life before my daughter, and  I got to focus on what I wanted to do and really be independent and stand on my own two feet.

I  was 30 years old when I met my husband and was moving up the career ladder in Insurance.  It definitely wasn’t what I wanted to do but I did enjoy the business and managerial side of it.  We traveled quite a bit before Lyla and got a chance to be more financially stable without the added expense of a child.  Once she was born, I decided I would stay at home.  This was a 180º turn around for me.

I don’t regret it though.  Our daughter is naturally shy and cautious.  Staying home with her gave her the time she needed to gain some self-confidence and independence.  Growing up I never thought I would give up my career to stay home, the old saying is right “Never say Never”.  Being a Stay at Home Mom did not really come naturally to me.  I have to work at it, yes staying home is work.  In addition, I loathe cleaning, I mean really loathe.  It puts me in a horrific mood.  I adore cooking and I don’t mind doing the dishes and cleaning the kitchen but that is about it.  It took me a while to feel comfortable in my “new” skin.

Now that she is in kindergarten, I’m trying something new again with this food blog.  I really don’t know where it will go if anywhere.  However, I’m just open to learning and seeing what happens.  My daughter is not loving Mommy not being available to her 24 hours a day and this summer is probably going to be a little rocky.  You will hear less of me but I won’t disappear completely.  I am going to cut out 1 new recipe post a week.  This will give me a little more time with her and more time to develop recipes, oh yes – and exercise and lose weight of, course!  I cannot forget that part.  After all, one of my most important duties as a parent is to teach my daughter to be happy and healthy which means eating healthfully and exercising.

Lightened Ham Salad

Prep Time 35 minutes

  • 1 lb ham chopped
  • 1 red pepper chopped
  • 1/2 cup 2% fat cottage cheese
  • 1/4 cup chopped onion
  • 1/4 cup 0% or 2% fat Greek Yogurt
  • 5 basil leaves


  1. Put all ingredients into a food processor and pulse until it is the texture you would like. (You can make it chunky or fairly smooth)
  2. Refrigerate for 30 minutes to let the flavors combine. Serve on a slice of fresh Harvest Grain Bread.
