When you have a good healthy banana pudding, you can feel it in your toes. Yes, really! One taste of a good banana pudding and your eyes roll back, your mouth widens to the largest smile possible, like a Cheshire cat. You feel a little quiver in your bones all the way down to your toes. That is what a good banana pudding can do for you. So imagine what a great Healthy Banana Pudding with Caramel will do to you. One taste and you will hear a choir of birds singing. Your taste buds will be shocked at the scrumptious flavors causing them to quiver with anticipation for the next bite.
To top it off, this is a lower calorie and healthier version. When I first started Food Done Light, I looked for a replacement for cream. Heavy cream is loaded with saturated fat and calories. I knew it wasn’t an option for most recipes. I saw all the non-dairy options, and the nutritional value was perfect for recipes. It seemed a little “out of the box” at the time. I wasn’t vegan or lactose intolerant. I wasn’t the target market for these products, but they were absolutely perfect for me. It showed me I needed to be open to new products.
I’ve never looked back. Luckily the market for these non-dairy products has exploded and now there are so many options. Silk® just came out with Nutchello™. It is like a creamy milkshake that comes in three different flavors. I used Dark Chocolate + Walnuts Nutchello™ to make a German Chocolate Cake Martini. In this recipe, I used the Caramel Almonds + Cashews for the basis of my healthy banana pudding. Yummilicious.
Even though I used non-dairy Silk® Nutchello™, this is not a non-dairy recipe. I still used cream cheese and a little whipping cream. Moderation is the key. I also loved making these in single serving containers. Mason jars make the cutest presentation, and I am not tempted to eat the entire big bowl. If you want to make one big bowl of healthy banana pudding to serve to your guests, go for it. It would be a little quicker to put together. Don’t worry about a little of the caramel sauce slipping over the side.I think it makes the dessert look even more luscious. It matches the flavor. Normally I am all about presenting a clean plate to my guests, but when it comes to caramel sauce the drip down the side is enticing.

Caramel Banana Pudding
- 2 tbsp . Birds Custard Powder*
- 1 tbsp . sugar
- 2 cups Silk® Nutchello™ Caramel Almonds + Cashews
- 1 mashed overripe banana
- 4 oz . Greek yogurt cream cheese , softened
- 1/4 cup heavy whipping cream
- 1/4 cup 2% plain Greek yogurt
- 1 tsp . pure vanilla extract
- 35 vanilla wafers
- 3 bananas , sliced
- 7 1/2 tsp . caramel sauce (sugar-free or regular)
In a medium saucepan, whisk together custard powder and sugar.
Whisk in 2 tbsp. of Nutchello™ until smooth. Set aside.
In another saucepan, heat remaining Nutchello™ until almost at a boil. Do NOT boil.
Whisk into the custard mix. Place over low heat.
Bring to a boil, stirring continuously.
Pour into a glass bowl and stir in mashed banana.
Push plastic wrap down so that it covers the custard completely. Refrigerate until cold.
In a medium bowl using an electric beater, beat cream cheese until smooth.
Add in heavy cream and beat until soft peaks form.
Add in yogurt and vanilla. Continue to beat until soft peaks form again.
Place three vanilla wafers in the bottom of 5 small mason jars.
Evenly spoon half of the custard into each of the mason jars.
Top with a few sliced bananas.
Drizzle 1/2 tsp. caramel sauce into each jar.
Evenly divide half the whipped topping and place in mason jars.
Repeat starting with wafers.
Finish jars with a slice of banana and a vanilla wafer.
Refrigerate until ready to serve.
*If you cannot find Bird's Custard Powder, using a pudding mix.
