Kettle Corn with Less Sugar (Low Calorie)

The perfect snack at 2 weight watcher points, less sugar Kettle Corn.

It’s 4pm and my stomach is starting to growl for snack time.  Oh, 4pm feels like the bewitching hour.  I feel a little grumpy and can think of nothing but food.  My lunch calories have long since gone, and my stomach is demanding food before my body provides me with more energy.  Last year I reached for a bag of chips way too often.  This year I am stomping that snack monster down by feeding it air popped popcorn turned into less added sugar kettle corn.  Kettle corn is perfect for a snack.  It takes care of both my sweet and savory snack craving.  Winner, winner, popcorn snack.  Ok, that doesn’t rhyme, but you get the idea.

Not too sweet - just perfect.

With a small 4pm snack, I feel like I can make it until dinner and keep my New Year’s resolution of a healthy body and mind.  Normally a cup of kettle corn has approximately 16 grams of sugar in it.  That is more than half of your daily intake of sugar.  Whoa! By swapping SPLENDA® Sugar Blend for granulated sugar, I  can slash the sugar grams.  (No, that doesn’t mean I eat more – cheeky response! I know you were thinking it.) I am really striving for balance in my life, work and food.  So far so good. Scratch that thinking – this is a lifetime change not so far so good, in other words I think I’ll blow it sooner or later.  For once I don’t feel that way.  I feel in control of food rather than food controlling me.  It is rather empowering.

Less Sugar Kettle Corn

Ingredients

  • 8 cups air-popped popcorn
  • 2 sprays of cooking spray
  • 2 tsp. SPLENDA® Sugar Blend
  • 1 tsp. kosher salt

Instructions

  1. Place popcorn in a large bowl. Spray once with cooking spray and toss to coat. Spray again and toss popcorn.
  2. Stir in SPLENDA® and salt.
  3. Pour all the popcorn and any salt and sugar into a cast-iron pan over medium heat.
  4. Stir constantly until sugar just starts to melt.
  5. Carefully pour into a bowl and enjoy

  1. I used to love to make homemade kettle corn and then I calculated the calories one day and haven't made it since! This looks like a huge improvement on the recipe! I love that the popcorn is air popped so there isn't a ton of oil and fat. This would make the perfect afternoon snack. And those popcorn boxes are too cute.

      Thanks Tracy. The real key to this is tossing everything in a cast-iron pan afterwards. Gives the popcorn great flavor.

  9. Wow I didn't realize regular kettle corn had so much sugar. Your recipe seems like a great way to help cut back. I have a sweet/salt tooth, too and turn to popcorn to help settle it. I'd much rather make it myself than eat some of the other options out there.

      Hi Lydia, I really like that I can control the sugar and salt. Tossing it all together in a cast-iron pan brings all the flavors together.
