Lemongrass Mint Iced Tea, aka hubby’s special tea, is on the menu today.  Why hubby’s special tea?  He is from India and this is quite a common tea.  Theirs is always hot, but I love it cold.  When I was pregnant with our now 9-year-old, I was suddenly turned off of water. That was quite a surprise to someone who usually loves water.  I had a hard time stomaching it in the morning.  My husband made me some decaf tea with mint and lemongrass.  During the hot summer months in Florida and being 6 months pregnant, hot tea was not high on my list. So he popped it in the refrigerator for me.  I could have a glass of Lemongrass Mint Iced Tea, and I felt my stomach soothed. What a relief. After a glass of the tea, I could drink water without that queasy feeling.

During the Winter I found drinking a cup of hot tea with lemon and ginger took care of my afternoon munchies.  At 3pm, my brain starts screaming for a snack. Lemongrass Mint Iced Tea

Ingredients

  • 1 lemongrass stalk , lightly smashed
  • 1 sprig mint
  • 6 tea bags
  • 8 cups boiling water
  • SPLENDA Zero™ Liquid Sweetener

Instructions

  1. In a 10-cup heatproof container, add lemongrass, mint and tea bags.
  2. Pour boiling water into the container.
  3. Let sit for 5 minutes.
  4. Remove tea bags.
  5. Cover and refrigerate until cold.
  6. Add SPLENDA® Zero™ No Calorie Liquid Sweetener to taste. I like 1 squeeze per glass.

  10. I recently used lemongrass to make chicken in the crock pot and loved it! The smell was amazing! I am an avid iced tea drinker, don't like coffee at all, and this would be great to have instead of plain:)

      It does smell wonderful. It grows like a weed in our yard so I can have it whenever. You will love it in tea.
