Another use for my whoopie pie pans. This time I actually made whoopie pies with them, amazing. Funnily enough, I had just finished editing these pictures when my daughter came home from school. I asked her if she wanted a snack, and she asked if I remembered the blueberry cookies with the filling she had shared with some friends. I brought up the pictures and asked if these were the ones she was asking about. “Yes, when can you make them again?” That is how good these cookies are. We had made these months ago, and she still remembers them. I think I will make them for her end of the school year party which is only one month away. What??
As much as she loved them, I think they are absolutely perfect for celebrating Mother’s Day. They are like a cookie, a pie and a mini cake all in one. So no matter what you or your Mom like, these Blueberry Lemon Whoopie Pie fit the bill. The cookie is soft and cake-like and filled with blueberries. The filling has supreme lemon flavor. There is something rather magical about the combination of lemon and blueberries. If you don’t have a whoopie pan, make smaller ones using a muffin tin. I’m keeping it short and sweet today! Lemon Blueberry Whoopie Pies
- 1 box wild blueberry muffin mix with can blueberries (like Krusteaz)
- 2 lemons , zested and juiced
- About 1/4 cup water
- 2 tbsp . oil
- 3 tbsp . 2% fat plain Greek yogurt
- 1 large egg
- 2 egg whites
- 1/2 cup lemon curd
- 2 tbsp . Greek yogurt cream cheese , softened
- 1/2 cup confectioners sugar
Preheat oven to 400°. Spray a whoopee pan with non-stick baking spray.
Rinse and drain the blueberries.
Mix every thing but blueberries together in a medium bowl until just combined.
Fold in the blueberries.
Place 2 tbsp. batter into each whoopee cup.
Bake for 8-11 minutes, until golden brown on the bottom and edges.
Place on a wire rack to cool.
Refill with remaining batter and repeat baking.
In a small bowl, mix together lemon curd, cream cheese and confectioners sugar.
Once cool, add 2 tsp. of filling to half the cookies. Top with remaining cookies
