Usually fruit salads don’t float my boat. The fruit tends to get mushy, all the flavors mingle together, and you cannot taste each individual fruit. My first thought for a fruit salad is usually “blah”. Oh my, oh my have things changed. Layered Summer Fruit Salad with Lime Cheesecake Dressing knocked my socks off. I saw a layered fruit salad on Pinterest (you can follow me on Pinterest here) and thought how pretty it looked, plus it was something else to make in my trifle bowl. Why not give it a whirl? I took my daughter with me to the grocery store and told her we needed to find fruit the color of a rainbow.

She was excited to help me pick out the ones we used. In fact, she would happily exclaim when she found fruit that was green, yellow, orange, red and purple. Surprisingly she loves to shop in the produce section. I would love to be able to gloat that it is because she loves fruit and vegetables, but the truth is she wants to put the fruit and vegetables in bags and tie them. She has been trying to perfect tying the top of the bag for a while now. If it helps her stay content and add a little excitement to produce, then it is fine with me.

One bite of this fruit salad and all my pre-conceived notions about fruit salad flew out the window. This salad was good, unbelievably good. Plus the fruit did not become soggy or mushy the next day. In fact, it was still delightful two days later. I think the trick is layering the fruit. It keeps the fruit separate, plus the dressing does not mix in. You mix it in as you serve it. It is a pretty ingenious recipe. It is beautiful to boot. I am putting this on our July 4th menu. It is refreshing, light and would be perfect for dessert or a side dish. Layered Summer Fruit Salad can also feed a large crowd. Serve it at your next party. It is bound to be a hit.

Layered Summer Fruit Salad with Lime Cheesecake Dressing

Ingredients

  • 3 cups chopped pineapple
  • 1 qt strawberries quartered
  • 12 oz blueberries
  • 2 recipe medium mangos peeled and cut into 1/2 inch cubes
  • 4 kiwi peeled and thinly sliced
  • 1 can mandarin oranges drained

Dressing:

  • 4 oz Greek yogurt cream cheese softened
  • 1/2 cup 2% fat cottage cheese
  • 1/2 cup reduced fat sour cream
  • 1/2 cup 2% fat plain Greek yogurt
  • 5 tbsp confectioner’s sugar
  • 2 limes zested and juiced
  • 1 tsp vanilla extract

Instructions

  1. In a trifle bowl, layer fruit in order above.
  2. In a food processor, puree ingredients for dressing.
  3. Spoon on top of fruit.
  4. Refrigerate until serving.

  8. Would ricotta be a good substitute for the cottage cheese?

      Hi Sara, Yes ricotta would work well. Calorie wise 1/2 cup low fat ricotta is 172 calories while a 1/2 cup 2% cottage cheese is 92 calories. I think the taste should be the same.

      Hi Deb, You can simply omit them both. Add a different fruit if you like. This is very versatile. I was simply going for different colors.
