Kale, Apple and Pistachio Salad with Maple Mustard Dressing is the perfect fall salad. It is crunchy, sweet, salty and tart.
Kale, apple and pistachio salad is the perfect accompaniment to a hearty, fall dinner. It is light, crisp, flavorful and a little acidic. One bite and you feel like you have fireworks of flavor exploding in your mouth. Initially you get the sour of lemon, then the tang of mustard, then the sweetness of maple syrup and apples and lastly the nuttiness of the pistachio. Your taste buds are oh so happy.
Kale was not something I grew up eating. I really thought of it as a stringy overcooked southern green slathered in bacon fat. I was looking to add a new vegetable to our diet so I decided to try it. It was love at first bite. I like it roasted, stewed or raw. Now it is an extremely popular vegetable you see all over. I love how versatile it is. Even though I can find it year round at our grocery store, I wait until fall to have it. I love the anticipation of that first bite when I know kale is in season.
There was something about this salad that really made it stand out. We rarely have the same dish twice in a month but we had this salad three times in a row for dinner! I even had it for lunch one day. Sure it is quick and easy but the flavor is totally addicting. You can serve it as a side dish or add some lean protein and have a fantastic light dinner. I am already dreaming about making this again. I am really stuck on this dish. I think I will have to serve this salad for our upcoming Halloween Dinner. Kale, apple and pistachio salad would also make a fantastic side dish for Thanksgiving, too. It tastes special enough for a special occasion. Try it for yourself and see if you become as addicted as I am.
