I’m changing up the schedule a little this week as I plan on taking July 4th off. So today is a recap day. On Friday, I will have a new recipe for you, Blackberry Quinoa Salad. In the meantime, check out the Food Done Light July 4th Menu.We usually have a July 4th party at our house with about 15-20 people. This year I am feeling the need to de-stress so the July 4th party has been thrown out the door. Of course, now I am regretting my decision. I love to entertain and have parties. I especially love coming up with a menu for food and drinks. The problem is I find so many recipes I want to make that I over do it and stress myself out. This year I thought we would just kick back with a BBQ and some cocktails. We’ll light fireworks and just enjoy a relaxing day. Now why does that sound B-o-r-i-n-g now! Go figure. It is too late now.
I would love to have a party and serve Watermelon Gazpacho. I just adore small servings of food. It looks so pretty in the little cups or I would serve it in a pretty bowl with all the toppings on the side for people to make their own. Either way it is so refreshing and light. Texas Caviar is another great way to start a party. Since there is no mayo, you don’t have to worry about it spoiling quickly. The little tang will wake up your taste buds and get you ready for Turkey Bacon Dogs topped with yes, more Texas Caviar. This is a great way to dress up a turkey dog and add to that meaty flavor. Low Fat Macaroni Salad tastes just like the real thing. It should, it is the real thing just slimmed down. You can end the night with Mini Strawberry and Blueberry Ice Cream Pies.
To wash down all this wonderful food, we usually have beer and wine. I also like to make some cocktails. One of my favorite’s is from Southern Living Raspberry Beer Cocktail. This is always a huge hit. I skip the vodka but double the recipe! It will still be gone in a flash. I also love to make Sangria. This recipe was first published in 1973. As written it makes enough for 100 people so I half it or even quarter it!
