Two of my favorite appetizers married in this recipe to recreate a low calorie appetizer you cannot wait to eat. I certainly couldn’t and the other vultures in my house were circling the kitchen asking “Is it ready yet?”. Please people, exit the kitchen. Leave me alone. I am creating what I hope is a masterpiece. I’m not sure who is worse our dog, Lucy, my husband or my 8-year-old daughter. Occasionally our cat, Stella, will even try to get in on the action, and sit in the kitchen to see if there are any scrapes.
OK, it is my fault the dog and cat think there may be scrapes, totally self-inflicted. My husband and daughter, not so much. In fact my daughter does it, because she sees Daddy trying to grab bits of this and that while I am cooking. No matter where Lucy, our dog, is in the house, as soon as she hears me chop something, she gallops into the kitchen. I can hear her charge down the stairs as quickly as possible. She will sit patiently and look oh so cute. Lucy will cock her head ever so slightly for the maximum impact of her cuteness.
Then she will lick her lips repeatedly and follow every movement of my arm as I chop the vegetables. If one drops on the floor, forget about it, she has already snagged the nugget of vegetable and gobbled it up, before I have to time to bend down to pick it up. She is one veggie loving dog. Cucumber may just be her favorite. The only vegetable she is not allowed, onion. Apparently it is not good for dogs. Beside, I definitely do not want oniony dog breathe in my face later on.
Once the Jalapeno Popper Stuffed Mushrooms came out of the oven, my husband magically appeared. He starts to reach for one right away. “STOP!”, I shout, “They are hot.”. Sometimes it stops him and others, the food gets popped in his mouth. Then you see him doing the mouth boogie as he tries to keep the morsel moving in his mouth; so he doesn’t burn the roof of his mouth. I will skip telling you the name I call him at that point. Inside, it makes me laugh and feel good that he appreciates the food I have made.
Photographs have to come first though. We eat a lot of cold meals in this house. I have my priorities and if the food is for the blog, photos must come first. Since food styling and photography is particularly painful and time-consuming for me, it takes a while. It is not my forte as you have probably seen. I really am working on it. Since I am making a recipe for the blog, I do get to taste it first. I want to make sure it is just the way I want it before I take pictures.
These were a true winner from the start. The vultures, except the dog and cat, happily enjoyed every mouthful. I loved the flavor of the jalapeno popper in a scrumptious stuffed mushroom. Try making it for your family and watch the vultures head to the kitchen as they smell these beauties cooking.

Jalapeno Popper Stuffed Mushrooms (Low Calorie, Low Fat)
- 2 jalapeno
- 4 oz . reduced fat cream cheese , softened
- 1/2 tsp . bacon salt or kosher salt
- 1/4 tsp . dried thyme
- 12 medium mushrooms , stems removed
- 1 1/2 tbsp . grated Parmesan cheese
- 1 1/2 tbsp . panko bread crumbs
Place oven rack 4 inches from the broiler. Preheat broiler on high.
Place jalapeno on a small baking sheet.
Broil jalapeno for about 5 minutes on each side. Jalapeno skin should be brown.
Place jalapeno into a paper bag and let steam for 5 minutes.
Turn the broiler off and preheat the oven to 350°.
Peel the skin of the jalapeno. Discard the stems and seeds. Chop into chunks.
In a food processor, puree jalapeno, cream cheese, bacon salt and thyme.
Place mushroom into an 8 x 8 inch baking dish.
Fill each mushroom cap with jalapeno cheese mixture.
Bake for 15 minutes.
In a small bowl, mix together cheese and panko.
Sprinkle on each mushroom and bake for another 5 minutes.
