Puffy and light, Individual Yorkshire Pudding is like a bit of heaven in every bite.
Yorkshire Pudding is a true dish that takes me back to my childhood in England. I think it may be my very favorite English food. There is something so entirely, absolutely, soul satisfying about Yorkshire Pudding. I don’t know if it is that wonderfully soft texture with just a little crunch on the top or the taste. It is such a simple and cheap dish to make but it makes my toes curl.
English food use to get a really bad rap. That always seemed funny to me because I adore it. There is no country that makes cornish pasties, sausage rolls, fish and chips, trifle and sausage better. I forgot cheddar cheese, branstone pickle, curry, mushy peas and treacle. Oh, I could go on and on.. I even loved the hot school lunches – oh I forgot custard. How could I forget Birds Custard. It is only the best custard in the world. School lunches sometimes had a jam tart with Birds Custard for dessert. That was my favorite.
The last time I was back was about 15 years ago. I went to London and northern England but didn’t go back to the little village we use to life in. We are hoping to take our little one next year and visit the old village. Surprisingly my hubby was living in Scotland, at the same time I lived in England as a child. Our “stars were crossing” even then. We hope to take her to Scotland and to visit Daddy’s old stomping grounds. No visit would be complete without a visit to Buckingham Palace. Maybe someday we’ll even bump into the Queen. Ha, highly unlikely, I know but I can dream. My daughter would rather see Princess Kate and Baby George.
If you are thinking Yorkshire Pudding is a lot like a popover, you are right. I made these in my popover pan but you can easily make one big one in a 13 x 9″ baking dish. Whatever floats your boat, just try it. Don’t freak out when it doesn’t pop up right away. It is only near the end of cooking that this beauty becomes light and fluffy and puffs so gorgeously.
