Serendipity! I just love that I can use that beautiful word about a recipe. It perfectly describes how this recipe came together. You see, I’d been working on a heart healthy version of Indian Butter Chicken for my husband, who had a heart attack almost 2 years ago. He is from India and it gives me great satisfaction to be able to cook some of his favorite comfort foods in more healthy ways. As you can guess, Butter Chicken has a lot of butter, ghee, in it. I had tried a version with just a tablespoon of butter but they were not providing that luxurious feel this dish needs.
Then the stars aligned, the sky opened and I heard about Star Butter Flavored Olive Oil. You better believe I did a happy dance. Olive oil is heart healthy and has no cholesterol. Now I could use butter flavored olive oil. This could be the answer I needed. Since Star Butter Flavored Olive Oil is only available as Walmart, I kept my fingers crossed that the Walmart by me would have it in stock. As luck would have it, I did find it. Another quick stop at Publix for some Greenwise chicken thighs and I was ready to rock and roll.
I knew very little about Indian food before I met my husband. One bite and I was hooked though. Indian food is so flavorful and full of spice. It is sometimes “blow your mind” spicy hot and other times it is chock full of spice flavor but not heat. Part of coming to terms with hubby’s heart attack is finding new ways to enjoy old things. I want to be able to give him a taste of home but in a way that keeps his heart healthy. I cannot tell you how excited I was to find butter flavored olive oil.
When it comes to eating Indian Butter Chicken for dinner, my husband has some stiff competition from our little one. She adores it and will devour everything on her plate than look for more. I will see each of them, with a piece of naan in their hand, trying to get to the leftover gravy first. I’ll hear “It’s mine. No, it’s mine!” being bantered between the two of them. Then fits of giggles will escape my little ones red gravy covered mouth.
That is why I love to cook for my family. It’s not just that the food tastes delicious and is healthy. It’s about having some time to escape the day and bond with each other. It gives us a break from stress and responsibility and reminds us what is important in life, each other. The “cherry on the sundae” is that they are getting heart healthy food and hopefully, we are instilling healthy eating habits into our little one. I also love that food can transport you to another place and time. Since we live in the US, my little one doesn’t get a lot of immersion into the Indian culture. By cooking Indian food, she can learn and be part of both parts of her heritage.
I was really thrilled with the results of this recipe using Star Butter Flavored Olive Oil. It gave me the butter flavor I wanted without adding any cholesterol. That is a huge win in my book. It’s just another way that we are taking our life back from heart disease instead of being controlled by it. My little one liked it too. She named it “Spicy Good Chicken”. Indian Butter Olive Oil Chicken
To Marinade Chicken:
- 1 lb boneless skinless chicken thighs, cut into large chunks
- 1/2 cup non-fat Greek yogurt
- 4 garlic cloves
- 1 piece of ginger 3 inch, roughly chopped
- 2 tbsp fresh lemon juice
- 2 tsp garam masala
- 1/2 tsp ground cinnamon
- 1 dried chili seeds removed for less spicy heat
- 4 tsp Star Butter Flavored Olive Oil
- 1 cup chopped onion
- 4 garlic cloves minced
- 1 tbsp minced ginger
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp turmeric
- 2 tbsp tomato paste
- ½ tsp kosher salt
- 1 can fire roasted diced tomatoes 15 oz., pureed
- 1 tbsp honey
- ¼ cup soy or coconut creamer or fat-free half and half
- Lime wedges
Place ingredients for marinade into a food processor and puree.
Add chicken to large plastic bag along with marinade. Refrigerate for at least 1 hour or up to overnight.
Heat a large non-stick skillet over medium high heat with Star Butter Flavored Olive Oil.
Add onion, garlic, and ginger and cook for 5 minutes.
Add coriander, garam masala, turmeric, tomato paste and salt. Cook, stirring constantly for 1 minute.
Add tomato puree and honey, and bring to a simmer.
Add chicken (without the marinade). Cover and cook for about 15 minutes, or until chicken is done.
Add cream and cook until just warmed.
Serve with lime wedges, rice and raita.
