Herb Marinated Grape Tomatoes, delicious red gems of summer time, need to be in your refrigerator this summer. They add a punch of healthy, flavor to any dish. I even like to pop them in my mouth whole for a snack. They also happen to go really well with scrambled eggs, grilled chicken or fish, in a salad or even cut up in a sandwich. They add bursts of flavor to whatever you put them on. It is amazing what these little red beauties can do.
They even remind me of my all-time favorite restaurant, that is no longer. Boo hoo! When we lived in Florida, we would go to the Hyatt Grand Cypress to the Chef’s Table on very special occasions. Chef Orlando was amazing. He came up with unique and utterly, mind blowingly, delicious food. They actually set up tables in the kitchen and encouraged you to come behind the counter to watch them cook. Oh yes, my dream come true. I could watch, learn and eat food all at the same time. Chef Orlando made marinated grapes tomatoes that they would serve with eggs benedict.
Now they took the time to peel all there tomatoes. That isn’t happening in my kitchen. They provided bursts of flavor on every dish. He gave me his recipe which I’ve adapted to make it more manageable for the home cook, like me. Sadly the restaurant is now closed and I believe Chef Orlando retired. At least I can enjoy a little of his flavor at home. Herb Marinated Grape Tomatoes are the perfect summer dish. Now if only our grape tomatoes would grow a little faster. I could make this with our garden-fresh tomatoes, another dream come true.

Herb Marinated Grape Tomatoes
- 1 lb. grape tomatoes
- 1/2 cup vegetable oil
- 1/2 cup parsley roughly chopped
- 4 tbsp. basil roughly chopped
- 2 tbsp. oregano roughly chopped
- 2 tbsp. chive roughly chopped
- 1/2 cup minced shallots
- 1 tsp. kosher salt
- 1/4 tsp. fresh ground black pepper
- 1/2 cup lemon juice
Combine all ingredients except lemon juice in a large jar.
Cover and refrigerate for 1 day.
Add lemon juice and serve.
